Mrs. Jud Dykeman’s recipe for preserving strawberries gives a suggestion for keeping the ber­ ries from going into a huddle at the top of the jar and for keep­ ing their rich red color from fading, These are things we have beeen discouraged about in our canning experience and maybe you for have been too. So we’ll hope better results this year. Preserved Strawberries (Mrs. Jud Dykeman) qts. strawberries cups white sugar cups water juice of. 1 lemon Method: Wash and hull berries. Make a syrup of sugar, water and lemon juice. Boil for four minutes. Add the strawberries and simmer three minutes. Let them stand in the syrup overnight; this plumps them so they won’t rise to the top of the jars after canning, In the morning, bring quickly to the boiling point using the hottest element. Pack in hot sterile jars to within one-quarter inch of the top. Adjust jar rings and tops. Tighten, then loosen one-quarter turn. Place in pan of hot water and oven bake for 25 minutes in 275° F oven. Remove jars from oven, tighten the tops and wrap each jar in newspaper before storing to protect rich, red color. Yield: six pints. Mrs. Tom Dinney has given us a jam recipe which sounds very easy to follow and she says the results are excellent. 4 2 2% the the Strawberry Jani (Mrs. Tom Dinney) 1 cup crushed berries 2 cups sugar Method: Mix and let stand a few minutes. Boil for 7 minutes (no more). Can and seal, A second recipe for jam given us by Mrs. Valeria Armstrong uses whole berries and is quite different from the preceding recipe. Strawberry Jam (Mrs. Valeria Armstrong) 2 boxes strawberries, washed and hulled Put in pan and cover with boil­ ing water. Let stand 5 minutes then drain well. Boil being careful not to burn, Add 3 cups sugar and boil Add 2 more cups sugar and boil 3 minutes. Add 1 tsp. butter and skim, Let stand till cold and bottle or bottle while hot if you prefer. 5 minutes, 2 minutes.
