"Handsome and cheerful"
Paul with the lovely dark eyes is 14 months old, Por-
tugese in descent, lie is a very handsome boy with brown,
slightly wavy hair and olive skin.
Paul is one of those babies who start life slowly, lie
seems in no hurry to accomplish anything. Psychological
tests nearly a year ago showed him much below the aver-
age, but a second test seven months later indicated consid-
erable progress, Though he is still not doing some of the
things you'd expect at his age, prospects are good that he
will be an average little boy,
Paul is a -cheerful chatty baby with a happy disposition.

Sweet, juicy McIntosh originated in Ont.,
Clinton News-Record, Plumley,. December 1.0,1971 5A
into a rectangle about 1/2 inch
thick.
Spread with 1/3 cup
raspberry or apricot jam.
Sprinkle with 1/4 cup chopped
toasted almonds. Roll like a jelly
roll. Cut in 1-inch slices. Place
slices in an overlapping fashion
to form a ring on a lightly
greased baking sheet. Bake 12-15
minutes in 425 deg.. F oven.
Store fresh meat unwrapped
or loosely covered. A loose
wrapping allows some air to
circulate and causes the surface
of the meat to dry out slightly.
This reduces bacteria growth on
the meat and increases the time
it may be safely stored.
The only meats which should
be left in their original
wrappings are those that are
cured, smoked, or vacuum
packaged. Bacon, ham, sausage,
wieners, and luncheon meats are
in this group.
For other fresh meats, loosen
the wrappings at both ends of
the package, or unwrap
completely and cover with a
loose sheet of waxed paper or
plastic. The surface colour of the
meat may darken, but this is not
a sign of a change in quality in
this case. The colour change
results from a reaction of
oxygen in the air with the
colouring matter of the meat,

Ontario Food Council, Ontario
Department of Agriculture and
Food give this short list of
recommended storage times;
Roasts, 5 to 6 days; steaks,
chops, 3 to 5 days; ground meat,
2 days; stewing meat, 2 days;
sliced liver, 2 days; poultry, 2
days; bacon, 5 to 7 days;
wieners, 4 to 5 days; ham
(whole), 7 days; ham (half) 8 to
5 days,

HOLLAND CHEESE BISCUITS
11/2 cups shredded imported
Holland Edam or Gouda (6 oz.)
2 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons sugar
1/2 eagf):boit salt
3 tablespoons butter or
margarine
3/4-1 cup milk
Mix shredded imported
Holland cheese with dry
ingredients. Cut solid butter or
margarine into dry ingredients
with a pastry blender until
mixture is the texture of coarse
meal. Make a well in the centre
of the mixture then add milk all
at once. Stir quickly to form
dough.
Turn the dough onto a
floured board. Knead 10-12
times. Pat down and roll lightly
with a floured polling pin to 1
inch thick. Cut with buiscuit
cutter dipped in flour. Place
biscuits on lightly greased baking
sheet. Brush tops with melted
butter if desired. Bake 12-15
minutes in 425 deg. F oven.
Makes- two dozen buiscuits, 11/2
inches diameter.

A single tree in Dundas
County, Ontario, is the source of
ail of today's McIntosh apple
orchards across Canada and
throughout the world.
In 1811, while clearing land
on his homestead in Dundas
County, John McIntosh
discovered apple trees growing
wild near the ruins of an earlier
attempt to settler They were
possibly seedlings from apple
trees carried to Ontario by
settlers moving west from
Quebec. John McIntosh
transplanted the trees and one of
them produced a fragrant juicy
apple, crisp and sweet. Seedlings
from the popular tree were sold
to neighbours, but failed to
produce the same fruit.
It was not until 1835 that the
true variety was successfully
reproduced. A farmhand taught
John McIntosh's son how to
take a branch from the McIntosh
apple tree, and graft or join it to
a tree root which would support
its growth to produce another
tree exactly like the original.
Today, Ontario harvests over
6 million bushels of apples a
year. Half of these are McIntosh.
The McIntosh apple has been
used to develop new apple
varieties which share its good
qualities. The Cortland, Melba,
and Spartan apples are three of
these, say food specialists at the
Ontario Food Council, Ontario
Department of Agriculture and
Food,
C. A. OR COLD STORAGE
MAINTAINS APPLE QUALITY
Over 6 million bushels of
apples are picked from Ontario
trees every year, Half of them
are placed in special storage
units designed to, maintain apple
quality for later sale. These may
be cold storage units or
Controlled Atmosphere (C.A.)

After harvest, apples continue
to ripen, If they are placed in
cold storage, where the
temperature is just above the
freezing point of apples, ripening
slows down. High humidity
prevents drying and shriveling.
High quality apples can be
stored this way for about three
months.
Apples available now and
until February will be cold
storage apples. After that time,
low temperature alone will not
slow down ripening enough to
maintain quality. Controlled
Atmosphere units will then be
opened "C, A. apples" made
available.
As apples ripen, either on the
tree or after harvest, they take in
oxygen and give off carbon
dioxide. C.A. storage uses a
combination of reduced oxygen
supply, raised carbon dioxide
levels, and low temperature to
virtually half the natural
ripening process,
