RUSSELL COLCLOUGH The Clintonian Club met on Thursday afternoon May 6 at the home of Mrs. Ruth Mulholland. The President opened the meeting with two poems followed by the Housewife's Creed and The Lord's Prayer in unison. The minutes of the last meeting were read and approved. Several thank you notes were read. The treasurer's report was read by Mrs. Vi Lampman and the flowers and cards report was given by Mrs. G. Glazier. Several cards and flowers had been sent out the past month. Mrs. E. Kendall reported for the work committee. A quilt is started for the club. A discussion on a picnic to be held late in June followed. Further arrangements to be made next meeting. The winners of the dutch auctions were Mrs. T. Bailey and Mrs. H. Adams. The mystery prize was won by Mrs. V. Lampman. The president closed the meeting with the Mizpah Benediction, after which lunch was served. The next meeting will be held at the home of Mrs. E. The "Canton Pork Balls" recipe has been so named because of the subtle seasonings suggesting the Chinese cuisine. These practical people, as well as 'others, have eaten pork for centuries. Indeed the early alphabet character for "home" was the combination of a roof over a pig! CANTON PORK BALLS Pork Balls 11/2 pounds lean minced pork 1/2 cup finely chopped onion 1 teaspoon salt' 1/8 teapoon pepper V4 teaspoon ginger 1 beaten egg 2 tablespoons fat Mix pork, onion, seasonings and egg. Form in 11/2-inch balls. Brown meat balls in fat until done (about 10 minutes). Remove from fat and drain. Sauce '/a cup chopped onion 1 cup sliced celery 2 tablespoons cornstarch 'A teaspoon ginger 2 tablespoons sugar 1 tablespoon soy sauce 1 cup chicken bouillon V2 cup syrup from canned peaches (or syrup plus water) 1/4 cup vinegar 1 cup diced canned peaches Drain all but one tablespoon fat from pan. Saute onion and celery in fat until onion is transparent. Combine remaining ingredients except peaches and pour into pan. Stir and cook '/2 cup chopped, onion 1/2 cup diced celery 3 tablespoons butter 11/2 cups diced peeled apples 3 tablespoons flour 1 tablespoon curry powder 1/2 teaspoon salt 1/8 teaspoon pepper 1 teaspoon sugar 1 teaspoon lemon rind 1 tablespoon lemon juice 2 cups beef bouillon Saute onion and celery in butter until onion is transparent. Add apples; blend in flour, seasonings, sugar and lemop rind. Gradually add lemon juice and 'bouillon. Stir and cook until smooth. Cover and simmer 1 hour. Glaze: 1/2 cup apple jelly (use pale for light colored fruits; red for darker fruits) 1 teaspoon water Melt jelly in small saucepan on low heat. Stir in water. Brush glaze on fruit.
