egg, pickles and vegetables. The home economists at Canada Agriculture say they can be made a
few hours ahead, covered and refrigerated. At serving time, knives and forks are provided along

Sandwiches using
hard-cooked eggs
EGG AND EACON
FILLING: Make as EQG
FILLING but use 1j4 cup fried
crumbled bacon and one
tablespoon Chopped parsley in
place of celery and onion.
EGG AND GREEN PEPPER
FILLING: Make as EGG
FILLING but use two
tablespoons chopped green
pepper, one teaspoon dry
mustard and one tablespbori
catsup in place of celery and
reduce salad dressing to two
tablespoons.
CURRIED EGG FILLING:
Make as EGG FILLING but
blend 1/2 teaspoon curry
powder with salad dressing.
EGG AND OLIVE FILLING:
Make as EGG FILLING but add
three tablespoons chopped
olives. Makes about 1 1/2 cups
(6 sandwiches),
Hard-cooked eggs need not
always be chopped to make
sandwiches. When they are
carefully cooked and sliced, the
slices contribute color and
design to open-face sandwiches.
Slices of bread are buttered,
then thin slices of cold meat,
tomato, cucumber and pickles
are used along with egg slices.
The artistry of the finished
sandwich is limited only by
one's creativity.
With his hands held high, Kevin looks like a hockey
player who has just scored a goal — but his glee must
have had another reason because Kevin is only 21/2 years
old.
He does like to play with children, though, joining in
their games as much as he can, or he can be quite
contented playing alone for as long as an hour at a time.
Kevin is a blue-eyed blonde of Anglo-Saxon and Irish
descent. He's short and chubby, easygoing and good-na-
tured. He's talking in small sentences either to people or
animals. .
This laddie was born prematurely and had a whole
series of minor health problems in his first year. He is
still susceptible to colds. He has a slight loss of peripheral
vision, but otherwise his sight is normal. He has a good
background, but because of birth difficulties it is possible
he may have some learning problems when he gets to
school.
In the meantime, he is a handsome youngster with a
beguiling personality who makes friends with everyone he
meets. He needs loving parents who will not be concerned

The Earl of Sandwich really
started something when he
ordered the first sandwich-meat
between, slices of bread.
Sandwiches are now made in all
shapes and sizes and suit all
occasions from, the dainty tea
type to the hearty meal variety.
since many sandwich fillings
use hard-cooked egges, it is
important that the eggs be
cooked properly. Sometimes
hard-cooked eggs have a dark
border around the yolks which
detracts greatly from their
appearance, To avoid this, a
moderate cooking temperature
should be used and the eggs
cooled quickly. It is best to
cover eggs with cold water and
bring quickly to a boil. Reduce
heat immediately to keep water
below Simmering for 20 to 25
minutes. Chill immediately in
cold water. To make it easier to
peel eggs later, crack the shells
while they are cooling.
Incidentally, if you have trouble
removing the shells from cooked
eggs, this is a sure sign of a really
fresh egg.
Most persons enjoy egg
sandwiches. The home
economists at Canada
Agriculture give these
suggestions to make the usual
egg filling more interesting. The
fillings will keep for several days
in the refrigerator.
EGG SANDWICH FILLING
4 chopped hard-cooked eggs
2 tablespoons chopped celery
2 tablespoons chopped onion
1 /4 cup salad dressing
Combine ingredients. Makes 1
1/4 cups (5 sandwiches).
You gotta
have heart
Roasts, chops or meatballs
aren't the only kinds of meat.
Variety meats like liver, kidney
or tongue are just as worthy of
mention. Most have a
delightfully different flavor and
nutritious and inexpensive -
well under a dollar a pound. The
trick, say home economists,
Macdonald Institute, University
of Guelph, is to buy variety
meat fresh from a reputable
store and to serve it within a day
or two.
They suggest this braised beef
heart recipe. Be sure to trim
away any excess fat, fibrous bits,
or remaining membranes and
tubes. Cook slowly for complete
tenderness, using a braising
method or pressure cooker,
following the manufacturer's
directions.
STUFFED BEEF HEART
1 beef heart
11/4 cups soft bread crumbs
1 small onion, chopped
4 stalks celery, diced
4 slices bacon, cooked and
crumbled
1 egg, slightly beaten
2 tbsp. milk
1/4 tsp. salt
1/4 tsp. pepper
IA tsp. thyme
beef broth 2-3 cups
bay leaf
Wash heart thoroughly, dry
and remove any excess fat and
tissue. Sprinkle inside and out
with salt and pepper. Combine
the crumbs, onions, celery,
baton, egg, milk, salt, pepper
and thyme. Fill the heart with
the stuffing and lace together
with skewers and string. Plate
heart in a Dutch oven or heavy
pan and add beef broth. Cover
and simmer for three hours. Add
more broth as needed to keep
meat moist. Add bay leaf and
diced vegetables such as turnip,
carrot, potato. Cover again and
simmer until tender. Serve meat
in slices. Serves 5-6.
