The regular meeting of the
Scouts, Cubs, and Guides Ladies'
Auxiliary was held at the home
of Mrs. Joe Mayman on March
16, with 18 members present.
The meeting opened with the
Guide Mother's Prayer.
The treasurer's and secretary's
reports were given and adopted.
Plans for a father and son
banquet to be held at the end of
April were discussed,
Dates for bake sales were
picked and they are Saturday,
May 22 and Friday, July 16.
Mrs. Ted Gozzard gave a
report on Ranger activities and
also the details of a meeting she
had with Guide commissioners
in Goderich.
Mrs. Joan Merner gave a
report on a Huron District camp
meeting she had attended at
Clinton. She reported that
finances are needed.
The next meeting will be held
at the home of Mrs. Lloyd
Westlake on Tuesday, May 18,
The meeting closed with the
Mispah Benediction.
Lunch was served by Mrs.
Mayman.

written by Major George
Youmatoff, padre of CFB,
Clinton, and read by him at

It's the fashion to be angry, to
protest and cry aloud
About racial inequality and
such,
And it really doesn't matter, just

the pension cheques are late

If by grasping at your freedom

For this freedom that we speak

Filling
2 cans (7% oz. each) or 1 can
(151 oz,) B.C, Salmon
1/2 cup grated Parmesan cheese
11/2-2 cups well-drained cooked
tomatoes
1/2 teaspoon oregano leaves,
crushed
1/2 teaspoon sweet basil
2 tablespoons cooking oil
1/2 medium onion, grated
1/4 lb. Mozzarella cheese slices
Mash salmon with juice. Add
otato flakes, onion, seasonings,
d egg. Mix well. Make into 6
rge patties. Broil or pan-fry
ntil brown. Cut each
mburger bun in half. Place a
oked salmon pattie on top of

ckle. Garnish with cheese,
ion, and tomato slices.

cheese slices into strips and
arranging them last in a pattern.

TO MAKE CELERY SAUCE
— Combine one 10-ounce can
condensed cream of celery soup
with one-third cup milk and two
tablespoons chopped green
onions and heat.
At this time of year many
shoppers select vegetables from
the frozen food counter. These
vegetables are often more
economical than the imported
ones. There is a wide choice of
frozen vegetables available in
various colors, shapes or
combinations. Indeed, it is easy
to bring variety to winter meals
through frozen vegetables.
Commercially frozen
vegetables are frozen on trays
before packaging and so separate
easily. They are graded Canada
Fancy and Canada Choice,
according to color, uniformity
of size, texture and absence of
defects when examined after
thawing. Flavor and tenderness
are checked after the product is
cooked. Frozen vegetables are
packed in 10, 12-ounce or 2
pound packages. The larger
package is usually the better
buy. The required amount may
be measured out and the rest put
back in the freezer. The package
should be carefully sealed before
it is returned to the freezer.
Any effects of temperature
variations remain with the food
because a frozen product
"remembers" its past history.
Temperatures above zero degrees
cause frost or ice crystals to
form inside the packages. This
results in a desiccated product
which indicates some loss of
flavor. When frozen vegetables
are kept at zero or below, the
quality may be retained for
many months.

Cook peas according to
package directions. Drain. Add
rice, onion, parsley and
seasonings. Combine bouillon,
milk and eggs. Add to rice and
mix lightly. Fill buttered custard
cups with mixture and
oven-poach at 350 degrees F.

CLINTON IGA Ways Of Serving Frozen Peas
Frozen peas, which have been
carefully stored, cooked and
served can rival the flavor and
appearance of fresh green peas.
Special varieties of peas, suitable
for freezing, are harvested at the
peak of sweetness. They are
blanched before freezing then
frozen before packaging. The
peas ate graded Canada Fancy
and Canada Choice, depending
on the color, uniformity of Size,
texture and absence of defects.
Frozen peas are packaged in
the 12-ounce size which usually
serves four, or the 2-pound, 10
serving size. Cost pet serving
may be calculated accordingly.
Since the peas have been
partially cooked during
blanching, care must be taken
not to overcook them. They
Should be boiled in a very small
amount of water.„
However, frozen peas will
have more flavor if cooked by
either or the following methods,
according to the home
e conomists at Canada
Agriculture. For a 12-ounce
package., Melt 2 tablespoons
butter in top of a double boiler,
add peas, sprinkle with salt then
covet and nook over boiling
water until tender (about 20
minutes) OR place peas in a
greased baking dish, sprinkle
with salt and dot with 2
tablespoons butter then cover
and bake 35 to 40 minutes at
325 degrees F. If desired add
one of the following to the
cooked, buttered peas just
before serving: curry powder,
savory., chopped chives or mint
jelly.
Pot an unusual way to serve
frozen peas, combine cooked
peas and rice together with
seasonings, Place the mixture its
individual molds for
oven-poaching then pour a
celery sauce over the Molds at
serving time.
