2 tsps. poultry seasoning
1/2 lb. pork sausage meat,
browned
1 (5-oz.) can oysters, drained

A Christmas Log Cake is
always an interesting
conversation piece as well as
good eating for sophistidated
palates.. It is a "show-off"
dessert for holiday entertaining.
CHRISTMAS LOG CAKE
1/4 cup sugar
'/2 cup sifted all-purpose flour
1/3 cup cocoa
3/4 tsp. baking powder
1/4 tsp. salt
4 eggs
'/2 cup sugar
V2 tsp. vanilla •
. Measure then sift together 1/4
cup sugar, flour, cocoa, baking
powder and salt into separate
bowl or onto waxed paper; set
aside. Beat eggs in• deep bowl
about 2 minutes or until lemon
colored. ' Add remaining • sugar

'Spread evenly in 10 x 15 inch
pan which has been lined with
waxed paper then greased and,
lightly floured. Bake. in
pre-heated 400 deg. F oven
12-13 minutes.
Loosen edge of cake; turn out
onto tea towel which has been
sprinkled with icing sugar.
Remove waxed paper then trim
off crisp edge of cake, Quickly
roll cake up in towel. Cook on
rack; unroll. Spread with Butter
Cream. Re-roll then spread with
Chocolate, Cream Frosting. Draw
a fork over frosting to give a
bark effect. Sprinkle lightly with
icing sugar to resemble snow.
Add sprigs of holly. Yield 4-6
servings.
BUTTER CREAM
CHOCOLATE VELVET
Prepare it the day before and

Food, recommends Hamburger
Stroganoff. It's a good idea to
double the recipe and freeze the
extra amount for a fast dinner at
some future date.

1/2 cup onion, chopped
1 clove garlic, minced
' 1 lb. ground beef
2 tbsp. flour
2 tsp. salt
'A tsp. pepper
1 8-oz, can sliced mushrooms
1 can cream of chicken soup,
undiluted
save yourself a last minute rush.
This dessert is a luscious ending
to your party fare.
1 envelope unflavoured gelatin
3 tbsp. cold water
2/3 cup sugar
Few grains salt,
1 cup boiling water
2 tbsp. cocoa
1/4 cup boiling water
2 egg whites
2 tbsp. sugar
Place gelatin in heat-proof
bowl; add cold water and soak
2.3 minutes. Add sugar and salt
then 1 cup boiling water; stir
until dissolved. Combine cocoa
with 1/4 cup boiling water until
smooth; add to gelatin Mixture.
Allow to set until slightly
thicker than egg whites. Beat egg
whites, with remaining sugar'
, until stiffpeaks forth; fold into
gelttiti.'iniktUre until well
blended. Pour into 1-quart
mould then chill until firm.
Serve with cream or chilled
custard sauce. Yield: 6 servings.

parsley
Saute onions, garlic, and meat
until brown. Drain off excess
fat. Stir in flour, salt, pepper and
mushrooms. Cook 5 to 10
minutes. Stir in soup. Simmer
uncovered 10 minutes. Stir in
sour cream. Heat through.
Garnish with parsley. Serves four
to six.
COTTAGE CHEESE'DIP
14 slices bacon
1 lb cottage cheese, sieved
tsp garlic powder
dash of cayenne,
dash of pepper
1 tsp onion salt
2 tsp lemon juice
1/4 cup mayonnaise
174 cup milk
Saute bacon until crisp and
brown. Crumble bacon and
combine with remaining
ingredients, Blend well. Put into
container, cover and store in
refrigerator. Makes about 21/2
cups.

serve. That loaf of bread in your
cupboard could save the day.
These savory bread snacks from
the Food Department,
Macdonald Institute, University
of Guelph, take only a moment
to prepare.
FAN TANS
In a loaf pan, place day-old
loaf of sliced bread, top side up.
Spread slices and the top with
one of the recipes given below.
Bake at 425 degrees F. for 15ei
minutes. If only part of a loaf is'!

The frosty glitter of a snowy
fairy-castle, or igloo, or
snowman, or Christmas tree can
be sculptured for a table centre
or other decoration from sugar
cubes, icing sugar mortar, and
food coloring.
Add a candle here and there;
insert a sprig of fir or holly,
employ a bit of child-like
imagination; and anything "can
arise from the sculpturers'
fingers!"
On a large sheet of newspaper,
lay out sugar cubes, food
coloring, icing sugar, a small
paint brush and a small bowl of
water.
Make a rough design of what
you want to build, paste the
sugar cubes together with a
mortar of icing sugar (made
from 1/2 cup of icing sugar and a
little water), color with brush
and food coloring, and you've
made your first creation!
Vol' added interest and final
good eating, let the children
decorate the sugar castle or igloo
with gum drops, nuts, licorice or
candy canes, and add glitter with
candlelight.
