{ With those of us whose ages are creeping Up to, .or past, "three
soreears..and e y ten," pur .appetites often long for the food mother
I used to Cook.
That is what happened to Carl when he went down to the fish
houses to procure a cohoe salmon for Good Friday dinner.
There in fish boxes, fresh out of the icy water, he saw some
fea]f it}:. Right away liis month began to water. He used to catch them
i *the°Bayfield River which flowed at the back of their farm on the

ihekn:,And were they' delicious!
''Lucy has an allergy for fish. She might eat a small portion one
day and get away with it, but if she ate some the next day, she'd be
ill. So she couldn't help eat a stuffed redfin..
cl Nevertheless, the memory of those fish kept haunting him, so
} April 10, .he,went clown and purchased two big fellows one six and
a half and one seven and a half pounds:
Carl's mother used to can extra redfins and suckers which he
caught, so that when eaten the pones were oft like those found in
tinned salmon. But he couldn't recall how she did it.
So Luey telephoned Mrs. L. H. D. MacLeod no, her husband
.had always salted fish, she said, but she'd tasted the home canned
product.
In a few minutes Mrs. MacLeod arrived with an old book on
!canning and .under "Fish" was the following "Scale fish and wipe
'with damp cloth. Cut into pieces of serving size. Pack into
thoroughly sterilized jars and add 1/2 teaspoon of salt to each pint jar.
No water is required, Process for 90 minutes at 15 lbs. pressure or in
;hot water bath for four hours, counting the time after the water
;starts to boil."
Carl knew that his mother had used vinegar but he didn't know
the quantity.
M1 So Lucy was instructed to telephone his cousin, Miss Bertha
I Diehl, Clinton.
l i Yes, she had canned suckers and redfins by various methods but
she Jiked the open kettle method the best: "Remove the backbone
and ribs. Cut. in serving portions and cook in a solution of equal
parts vinegar.and water. Pack into sterilized jars hot, adding a little
of.the fluid so that it filled the jar, and add a teaspoon of salt."
This sounded like a choice method to Lucy.
Carl cut up one of the fish, wrestled with removing the big bones,
and then his courage gave out when he thought of watching the pot
Ito see that the fish wasn't over -cooked.
He packed the portions into jars, added the salt and appealed to
Lucy:
"How much vinegar?"
She, who had no knowledge of its use with fish except when her
mother soused herring, made a wild guess at; "one tablespoon to a
jar." If they are on the acid side, it will be her fault.
Later, Lucy asked Mrs. Nelson Heard if she knew the proportions,
"It's so long ago," she replied, "I think Maw put in a teaspoon of
salt and the same of vinegar to each jar." Then she went on to tell
that she had read once that red fruit colouring could be added to
make the fish look like salmon.
`Mrs. Heard recalled once when she was a little girl that her father,
the late George Lawrason, caught so many back at the river that he
had to get; they±lterses and wagon to haul them up. And then he gave
them all away!
"Mr." quickly cut up the second fish, wrapped and consigned it
to the locker. He'd had enough of old-fashioned methods and was
glad to use the modern freezing method of preservation.
From these two fish he extracted considerable roe. He had called
the fish "shad" and Lucy discovered in a modern cookbook that
shad roe was a great delicacy and so she read the recipe out to him.
And he enjoyed roe for supper.
With so many names attached to this species of fish, Lucy began
to make inquiries, Fresh water Fishes of Eastern Canada by W. B.

Gizzard, shad has been caught in Georgian Bay and Lake Huron.
.The fish which is often known locally as "Shad" is a Northern
)R,edhorse (moxostoma aureolum) commonly known as Shortheaded
redhorse, redfin sucker, mullet. It eats mainly aquatic insects and
molluses, from the bottom of the lake or stream. Occasionally it is
taken by commercial fishermen. The flesh is flaky and sweet -tasting.

Bill, who lives with his wife, Laving Evelyn, on Keith Crescent in
Bayfield, spent 16 years in the civil .service on the Clinton base.
Ile began working in the Junior Ranks Mess in 1953, later became
caretaker of the Social Center and since 1958 has been caretaker
of the Officers Mess. The Parkers have two sons, William, who
works for the CPR in London, and Robert, a •plumber in

Huron plans deer season

A representative of the
Department of Lands and
Forests told Huron County
Council Friday that an open
deer season November 3, 4 and 5
in Huron is a "good idea."
The deep population is fairly
plentiful now and a deer season
would not do any great harm, it

animals will be given a new
anti -rabies serum, released and
test made to discover whether or
not the animal becomes immune
to the disease. Foxes are thought
to be the most susceptible to
rabies. For more information,

prominent fruit growers
attended a recent pruning and
spraying orchard demonstration
sponsored by the Department of
Agriculture and Food,
Stewart Middleton's was the
first orchard visited, then the
tour went on to the apple and
peach.orcbards of Art Bell, RR
2, Goderich,
Dr. R. W. Fisher of the
Vineland Research Station,
demonstrated how a sprayer
should be calibrated and
renozzled, when changing from
dilute to concentrate spraying.
Also present officially was A.
Hikitchi, provincial
entomologist.
Using a special red dye and
light, Mr. Fisher and Mr.
Hikitchi demonstrated how
spray coverage of trees can be
checked and rated in the
orchard, showing not only the
amount of coverage, but also the
size of the spray particles.
Russ Chard, Fruit and
Vegetable specialist,
demonstrated the ,pruning and
training of apple, peach and pear
trees and also how to handle
apple trees on dwarf and
semi -dwarf rootstocks.
Art Bell gave an efficient
demonstration of a quick and
easy way to get rid of pruning
brush, using his rotary mower,
