SCALLOPED POTATOES
'N' WIENERS
(Makes 6 to S Servings)
2 tablespoons butter •
1 cup chopped onion , •
1/4 cup all-purpose flour
11/2 teaspoons salt
1/8 teaspoon pepper
1/8 teaspoon paprika
21/2 cups milk
1'/2 cups shredded
Canadian-made natural Swiss
cheese
2 tablespoons chopped'P,Aisley
4 cups potatoes, thinly-sliced
1 pound wieners cut in 1/2-inch
diagonal slices
Preheat over to 325r,degrees
F. 'Melt butter in large frying
pan. Add onion and cook until
tender. Blend in flour, salt,
pepper and paprika. Gradually
stir in milk. Cook overlow heat,
stirring constantly, - until
smoothly thickened. Remove
from heat, add 1 cup of the
cheese and parsley. Stir j until
melted. Add and mix in potatoes
and three-quarters of, the
wieners. Turn into a /..-quart
casserole. Bake • covered in
preheated oven 11/2 hours. Place. processed Swiss Cheese
• remaining wieners over- surface 1 1 cup fine dry bread crumbs
of casserole; sprinkle'. with ' , 3 tablespoons butter, melted
cheese. Return to oven and Cook chicken breasts -and
bake, uncovered 15 . to 20
minutes, or until potatoes are
tender and surface golden
brown.

• Pre-heat' oven to 350 degress. Sift together flour, sugar, baking
powder, salt and soda. Stir in nutmeats and oats. Add remaining
:-'ingredients and stir only until blended., Pour into six greased juice
cans. Bake about thirty minutes. Let stand five minutes before
removing from cans.

A jellied salad has at least three things going for it: it tastes
good, looks pretty, and can be prepared in advance.
The variety of ingredientS in a jellied salad is limited only by
your taste and your imagination. Remember, however, that raw
fresh pineapple cannot be used.
SOUFFLE SALAD
1 cup hot water
1 3-ounce package lemon flavour gelatin powder
1/2 cup cold water
2 tablespoons vinegar
'1/2 cup mayonnaise
'A teaspoon salt
dash pepper
2 cups shredded cabbage
2 tablespoons minced celery
1 tablespoon minced onion
'A teaspoon celery seed
Dissolve gelatin in hot water. Add cold water, vinegar,
mayonnaise, and salt, pepper. With hand-beater, beat until well
blended. Place in freezer section ,of the refrigerator, and chill until
firm about one inch in from the edges, but still soft in the centre.
Then turn into a bowl, and using the, hand-beater, beat until fluffy.
Fold in vegetables, celery seed. Pour into a one-quart mold and
refrigerate until firm.
Unmold onto greens. Will serve six.

2' tablespoons finely-chopped
onion
1/4 cup flour
2 cups milk
1/4 teaspoon poultry seasoning
teaspoon salt
1/8 teaspoon pepper
1 egg
'A cup light cream
6 slices cooked ham
6 slices Canadian-made

375 degrees F. Melt butter in
heavy saucepan. Saute onion
until lightly browned. Blend in
flour, poultry seasoning, salt and
pepper. Very gradually stir in
milk. Cook over medium heat,
stirring constantly until
smoothly thickened. Beat egg
with cream and stir into hot
sauce, Cook, stirring constantly
a few minutes longer. In broad
shallow baking dish layer
chicken, ham and cheese. Cover
with sauce, Combine bread
crumbs and melted butter and
sprinkle over top of casserole.
Bake in preheated oven 20 to 25
minutes.
