ment of Christ's birth with a Nativity Scene. This custom was
popularized in the 13th century by St. Francis of Assis. At
a time when few books were available, and most people couldn't
read anyway, St. Francis dramatized the 'Nativity in 1224,
to help the people of Greccio, .Italy, understand the meaning
of Christmas. Villagers took the parts of Mary, Joseph, and
shepherds. Live animals were used, and a life-sized wax
figure of the Christ Child was placed in the manger.
It. was St. Francis who led the villagers in joyous dan-,
cing around the Nativity Scene,

Lebkuchen Rounds Are Favorite
1/2 teaspoon soda
1/2 teaspoon allspice
1 beaten egg 1/2 teaspoon nutmeg
1 tablespoon lemon juice 1 teaspoon cinnamon
1 teaspoon grated lemon peel 1/2 teaspoon cloves
2 1/4 cups sifted flour, 1/3 cup chopped citron
1/3 cup chopped almonds, whole
almonds and citron for decorating
Bring honey to boil, then cool. Add brown sugar, egg,
lemon peel and juice. I ,Sift flour with soda and spices, and
stir into honey mixture's ' Add chopped citron and almonds.
Store overnight in refrigeragor, Roll out to .one half inch
thinkness; cut into 4:inch rounds, Decorate with blanched
almonds arranged as -petals of a daisy with a round piece
of citron or angelica .for the center. Bake at 400 degree's
about fifteen minutes. Brush with glazing icing—confectioners'
sugar and water—immediately after taking from oven.

2/3 cup light cream teaspoon vanilla
1/2 cup pecan pieces
Butter the.'sides of a ;hey: 2-quart saucepan. C.ombide
the sugars, ...cream, milk, and. butter. COok over medium
;heat, stirring constantly, until sugars dissolve and mixture
comes to boiling. Then cook-to soft-ball stage (238 degrees),
stirring only if necessary. Remove from heat immediately,
and cool to lukewarm (110 degrees.)- without stirring. Add
vanilla. Beat vigorously until..fudge,becomes very thick and
starts to lose its gloss. Quickly stir in the -nuts and spread
in a buttered shallow pan or small' platter, Score in squares
while warm, and then cut whet:1*m. t 4fil

3 eggs
4 1/2 cups sifted flour
grated peel of 1 lemon
1/2 cup raisins
1/2 cup chopped flats
1/2 cup sifted confectioners'
sugar.
Scald milk; stir in sugar, salt, butter and mashed pota-
toes. Cool to lukewarm. Sprinkle yeast on warm water in
large mixing bowl; stir until dissolved. Add milk-potato'
mixture. Beat 2 of the eggs and add to Mixture. Stir in lemon
peel and half the flour, beat until smooth. Add remaining
flour or enough to make an easily handled dough.. Turn out
on lightly floured board and knead quickly and lightly, until
smooth and elastic —8 to 10 minutes. Cover and set in warm
place; let rise ,until doubled. Punch dough down and turn
out on lightly floured board. Knead raisins and nuts into
dough. Roll dough into circle 1/2-inch thick. Cut into rounds
with a 2 1/2 inch cutter. Place on greased baking sheet
about 1 inch apart. Separate remaining egg. Beat yolk
with 2 tablespoons water and brush buns with the mixture,
Cover buns and set in a warm place until doubled in bulk.
Bake at 375 degrees about 25 minutes. Beat remaining egg
white and add enough confectioners' sugar to make spreading
consistency. Frost buns; decorate as desired. Makes 2 dozen.
