Russell Thompson, who retired this month as Clinton police chief, was honoured by friends at a party last Saturday night. Held at the Community Centre, the event was planned by Lloyd Westlake, Chief Thompson's successor, and Doug Andrews, town recreation director. Though the gathering was relatively small last weekend, many town residents and businessmen bought tickets, making it possible to present the former chief with a wallet and a gift of more than $200. ,Mayor Donald Symons presented Mrs. Thompson with a corsage and also a cup and saucer set. Chief Thompson also received a plaque presented by Chief Westlake on behalf of Constable Leroy Oesch who was out of town and unable to attend. Credit Union slates meeting The annual', Meeting. of the' Clinton CoMmunity Credit Union will be, held in the Ontario Department of Agriculture and Food Board Room on Monday at 8 p.m. Hector Kingswell, president, in his annual report, the credit union's 17th, says the last year was a 'successful one with a heavy demand for first mortgage money, lie urges credit union members to attend the meeting to "air your views, hear the financial reports, elect officers, hire auditors and enjoy a good lunch." Following the ceremony a social evening was enjoyed by all, Put apples on ice now For quick apple pies all winter long, put some of this season's Ontario apple harvest into your freezer, suggests the Food Council, Ontario Department of Agriculture and Food. Select only full-flavoured, crisp, firm apples for freezing. Slice them directly into a weak brine solution of about 1 teaspoon salt to 1 quart water, and leave in the brine for no more than 15 to 20 minutes. Drain and drop the slices into boiling water for just two minutes. Time carefully, as overcooking makes the slices soft, while undercooking allows the frozen product to lose colour, flavour, and quality. A f ter cooking, pack the apples separately in amounts required for one or two pies, and add all or part of the sugar, as desired. Wrap, label, and freeze immediately.
