THE CITIZEN, THURSDAY, MARCH 22, 2012.Maple syrup production down due to weather The 2012 maple syrup season has been an interesting one according to Susanne Robinson of Robinson Maple Products in St. Augustine. “We started tapping on Feb. 6 when we normally don’t begin until mid-to-late February,” she said. “We finished boiling [on March 15].” While that may not seem overly odd, the Robinsons are usually still boiling until the first week of April meaning their season, while it started just over a week early, is short by 20 days. The reduced time, however, hasn’t been as damaging to their yield as it could have been. “We have heard other people are only getting half their expected yield, but we managed to get about 80 per cent of ours,” she said. Fortunately, while this year isn’t a banner year, the cold 2010/2011 winter provided local syrup producers with an abundance of product, that there are still reserves for the Robinsons to draw upon. “We had a wonderful year last year,” she said. “Our prices won’t be going up because we still have someof it left.”Robinson said that year after year she is asked what kind of crop she thinks they will see and she has to say the same thing every year: producers just don’t know. “You can never predict what kind of weather you’re going to face accurately enough to know how the sap will run,” she said. “I tell people who ask me that I’ll tell them in April what kind of year it will be.” Robinson said that she believes the situation in southwestern Ontario will be mirrored in other locations that produce. “Everyone out east will probably be facing the same thing,” she said. “It either has or is getting warm very quickly and that will reduce the yield.” Robinson said even if there is a cold snap, it will likely be too late to begin harvesting again. “It looks like the trees are going to start budding out soon and after that the sap’s chemistry changes,” she said. “You can tell when you’re boiling it from the smell that it won’t be good. The syrup will have a metallic taste to it.”She said that, once the chemicalchange has taken place the sap becomes unusable for maple syrup or anything as far as she knows. Canadian maple syrup and sugar is shipped throughout the world with major markets including the United States, Japan, Germany and the United Kingdom. In 2010 more than $230,000,000 worth of syrup was sent to foreign markets. Sap for maple syrup can beobtained from one of severaldifferent species of maple, however the three most common are the sugar maple tree, the red maple tree and the black maple tree. The black maple is considered one of the best and can be found as far north as the northern tip of Quebec and can be found as far south as Georgia in the United States. To collect sap a spile or tap is inserted in a drilled hole in a tree andthe sap is then either carried by linesto a central location or dripped into a bucket or clear bag for collection. The clear bags allow harvesters to know when there is sap to bring in. The sap is then boiled down to evaporate undesirable portions of it and can eventually be used to create dozens of different products including candies, butter and tea and, of course, maple syrup. BILL McCLINCHEY Bill George McClinchey “Silver Fox” of Clinton passed away on Sunday, March 11, 2012 at Clinton Public Hospital after battling a short illness due to a chronic condition. He was in his 76th year. Bill was the beloved husband of Fay McClinchey and loving father of Marnie and John Hill of Hensall and Terry Harcourt and Cheryl Anderson of Goderich. He was the cherished grandfather of Caitlyn, Jordan, John and Riley Hill and the dear brother of Joan and Don Bell and brother-in-law of Dorothy and Jim Carter, Hugh Cook and Larry Cook. Bill will also be missed by several nieces and nephews. He was predeceased by his parents Ernie McClinchey and Ida Godkin, his half-brother Stan Gingerich, stepson Richard Harcourt and granddaughter Molly Hill. At Bill’s request cremation has taken place and there will be no public funeral service. Friends were invited to a visitation at the Falconer Funeral Homes Ltd., Clinton Chapel on Friday, March 16. Interment of ashes will be at Blyth Union Cemetery. In lieu of flowers please consider donations in Bill’s memory to the Lung Association.
