A good deal of knowledge
about driving can be acquired
through experience; but exper-
ience, contrary to reputation,
is a haphazard and- spotty
teacher when it comes to driv-
ing, says the Ontario Safety
League. Traffic safety experts
are convinced that knowledge
of driving should be acquired
through some form of planned training,

the food service attendant

paration, ensuring good house-
keeping is maintained in mess
balls and kitchens snd effectiv-
ely managing food suppliesand•
equipment.
All training is administered
in two segments-a theoretical
and a practical. The first weeks
of every course vary in dura-
tion from three weeks to six
weeks, consists of formal lec-
tures. The student attends
classes conducted by trained
and qualified cooks for food
services attendant tradesmen.'

reconstitution of milk powder.

Progressing from the class-
room to-4the operating mess for
the remainder of their course,
the students spend an addition-
al three to six weeks in an
environment which will equip
them for ervice at any RCA'
unit,
During this segment, under
the guidance and assistance of
S. F, 5. instructors, student
cooks are taught food prepara-
tion in large quantity cook-
ery Methods instead of experi-
menting with small amounts
of food.
Eat Their Efforts
All food prepared at the
school is served to the stu-
dent population as well as a
selected group of Station Staff.
Personnel, giving a plate count
that averages from 95-110,
three meals per day.
The days allocated to prac-
tickal -training are divided into
phases; to complete the cycle
a student cook will need to do i
the meat preparation (butch-
ering), meat cookery, vegetable
preparation, vegetable cookery,
soups and sauces, baking and
dairy phases.
In se doing, each trainee
spends five days concentrating
on the techniques of prepara-
tion and service involved in
each phase before tackling a
