The foods department at Mac- donald Institute, Guelph, re- commend that green vegetables be cooked quickly and; uncover- ed to allow acids, which de- stroy the green chlorophyll, to escape. To hasten cooking, the vegetables may be covered after the first five minutes of cook- ing. Thin green leaves, Such as spinaCh, are an exception, and are cooked, covered, with only the water that 'clings to the leaves after washing. TIPS ON ON KEEPING BROWN SUGAR MOIST When the hot and dry weath- er appears, you inay have trouble keeping your brown sugar moist.. Herne economists at ivracdonald Institute, Guelph, suggest 'keeping the sugar in an 'airtight 'container such as a Pliofilni bag. A Slice of apple or orange- placed on wait paper on top of hard sugar wilt re- store freshness. Replace freep. ,ently to prevent mould forma- tion.
