Chocolate Fruit Cake (Makes One 8x8x3 Inch Cake) 3 cups seedless raisins, washed and dried 11/e cups chopped dates 1% cups halved' glace cherries 114 cups chopped glace pine- apple 94. cup blanched toasted halved almonds 3 cups sifted all-purpose flour 1% teaspoons baking powder % teaspoon baking soda X teaspoon salt X cup butter 1% teaspoons vanilla 1 teaspoon lemon extract 1 teaspoon almond flavouring 1 cup sugar 1. (1-ounce) square unsweet- ened chocolate, melted % cup cold coffee 3 eggs, well beaten 14. cup grape jelly Prepare cake pan by cutting square pieces of corrugated cardboard to fit the sides 'and bottom of an 8x8x3 inch pan, then Line with aluminum foil so that there are two layers of foil on 'the bottom and one layer on each side. Prepare Goderich 1 fruit and almonds the night fare if desired. Sift together flour, baking powder, baking soda and salt, Use half of this flour mixture to flour fruit and nut mixture, Cream butter WI, til fluffy; add flavourings. Gradually add sugar, beating thoroughly. Mix in' melted eh, ocolate. Add remaining flow mixture alternately with coffee stirring until well blended, Beat eggs with grape jelbe then add along with floured fruit mixture, Spread evenly in prepared pan, Garnish top with almonds and glace cherries, Rake in a slow oven (275°F) for 4% hours.
