If You Like
Pumpkin Pie-
some like it dark and others
like it light; some prefer it
spicy and others not, But if
you're not too well satisfied
with your present recipe far
pumpkin pie, the Information
Branch of the Ontario Depart-
ment of Agriculture suggests
that the following may well
become your favourite.
Pumpkin Pie
Line a pan with rolled out
pie paste, Moisten edge and
apply a strip of pastry about
half an inch wide to rim of
pie. Seal and crimp edges.
Since this shell is to be filled
when paste is raw, do not prick
with a fork, Put in the re-
frigerator to chill while pre-
paring filling,
Measure one cup of well-
drained, mashed, freshly cook-
ed pumpkin into top of double
boiler. Mix in 11/2 cups of rich
milk. Cover and heat pumpkin
mixture to scalding point over
boiling water,
Combine well in mixing bowl
% cup lightly packed brown
sugar, 1 teaspoon ground cin-
namon, 1/2 teaspoon ground
ginger, 14 teaspoon gr.:
aired nutmeg and 1/2 teas-
poon salt. Add 3 un-
beaten eggs and 1 teaspoon
grated orange rind. Beat with
a wooden spoon until the mix-
ture is mixed thoroughly. While
stirring egg mixture rapidly,
slowly add scalding pumpkin
mixture. Stir in 14 cup of or-
ange juice.
Pour filling into •chilled raw
pie shell. Bake pie in 450°F.
oven for 10 minutes, then re-
duce heat to 325°F. (slow) .and
continue baking until filling is
set. A silver knife inserted in
centre of filling should come
out clean. This will take about
45 minutes longer.

of the outlet in Clinton, prime
consideration was given to the
provision for adequate off-
street parking. Store customers
will find parking no problem
at the new store as they drive
onto an asphalt covered park
ing lot with space for approx-
imately 24 cars.
Manager of the new store
is Percy Pugh, former truck
driver at Stratford. The Clin-
ton store is .a unit of the
Stratford Stores Group in
charge of E. C. Skowby. Dist-
rict Manager is R. Herrington,
Kitchener.
Store hours at the store will
be 10 am. to 6 p.m. Monday
to Saturday. During the win-
ter months, the stare will be
closed on Wednesdays and dur-
ing the lunch hour period from

Brewers Retail Opened
With Reception, Dinner
Huron County got its second
beer store last Thursday, No-
vember 17, as Brewers' Ware-
housing Company opened its
new retail outlet at Clinton
at the corner of Maple and
Mill Streets. The Company's
first store in Huron County
was opened in Goderich on
November 2.
Following a tour of the
warehouse when all the ladies
were presented with corsages,
a reception and dinner were
held at the Hotel Clinton. In-
cluded were Mayor and Mrs.
Herb Bridle, Reeve Mel Crich,
Deputy Reeve M. J. Agnew,
Charles S. MacNatighton, MLA
for Huron, those who were ac-
tive in arranging for the vote
last November and again in
March; John S. Parker, Mr.
and Mrs. Wilf Parker, owners
of the building.
The store's buff brick ex-
terior along with the red, white
and black bullseye identifica-
tion markers have become fam-
iliar landmarks to thousands
of Canadians in the Province
of Ontario where Brewers' Re-
tail operates.
Planned with an eye to pl-
easing structural detail, both
the interior and exterior of the
one-storey building reflect the
integrated planning that has
gone into its design, construc-
tion and furnishings.
Modern materials have been
employed to advantage in such
items as the light green "spec-
traglaze" block rear wall, stain-
less steel counter tops, shrimp
coloured service counters,, ac-
oustic tile ceiling, aluminum
framed windows, and attract-
ive terrazzo flooring.
Fluorescent lighting has also
been installed to accent the
warmth reflected by the retail
area's contrasting color scheme.
A large refrigerator box, in-
stalled directly behind the
sales area• ensures that all
brewers' products will be prop-
erly chilled before being sold
over the counter to customers.

Mrs. Jackson Walker passed
away in. Clinton Public Hos-
pital Wednesday evening the

of the late Mr. and Mrs. Rob-
ert Carlisle, and had been a
resident of the village for over

Lodge, •a former member of
the Hensall Women's Institute,
member of the United Church
and Women's Missionary Soc-
iety. She was the last of a
family of 12.

a niece, survives; her together
with several nieces in the
west.

spunky rear-engine design.

All told there are nine Chevy Corvairs for '61! And every model is
just as thoroughly thrifty as Chevrolet can make it! But thrifty say-
ings is only one of the Conrair benefits — there's the new spunk of
the 145-cubic-inch air-cooled six cylinder engine — the proven per-
formance of Corvair's rear-engine design -- and the extra space
that's built into the '61 models. See all of Corvair — right now at
