HomeMy WebLinkAboutChristmastime Cookbook, 1980-11-13, Page 40QUEEN’S CAKE V2 cup dates % cup raisins IV2 cups water Vi cup butter 1 cup white sugar IV2 cups flour 1 tsp. soda 1 tsp. salt 1 tsp. baking powder 1 egg 1 tsp. vanilla Boil dates and raisins in 1 V2 cups water until 1 cup water remains. Remove fruit. Cream butter and sugar. Sift dry ingredients together. Add to creamed mixture alternately with water. Blend in egg and vanilla. Add fruit and mix well. Grease 8” cake pan and line with wax paper. Bake in oven 350° for 30 min. Topping 5 tbsp, brown sugar 3 tbsp, butter 2 tbsp, milk Vi cup coconut % cup chopped nuts Mix all ingredients together. Sprinkle over top of hot cake. Return to oven until mixture bubbles. Hattie Snell Londesboro WHIPPED CREAM CAKES 1 cup whipping cream 2 eggs 1 cup white sugar 1 tsp. vanilla 1 */2 cups sifted all purpose flour 2 tsps, baking powder Vi tsp. salt 2 tbsp, white sugar Vi tsp. cinnamon Heat oven to 350° Grease an 8” square pan. Whip the cream until stiff peaks form. Add eggs and beat well. Add 1 cup white sugar and vanilla and beat again. Sift flour, baking powder and salt together into mixture and stir to blend. Pour into nreoared Dan. Rake about ^5 minutes. Remove from oven. Combine 2 tbsp, white sugar and cinnamon and sprinkle evenly over the top. Cool in pan. Margaret Spence Brussels JELLY POWDER CAKE 1 cake mix, white or lemon % cups water 4 eggs 1 pkg. lemon jello powder Put above 4 ingredients into mixing bowl. Mix all at once beating for 2 minutes. Add % cup Crisco oil, heat 1 minute more. Bake in large flat 13x9x2 pan at 350 degrees for 30 minutes or until done. < Can be served with whipped cream or any favourite sauce. Cool 2% cups sifted all purpose flour 2 tsp. baking powder 1 cup butter 2 tsp. soda Vi tsp. salt 2Vi cups granulated sugar 4 eggs 1 Vi teaspoon vanilla Sift flour with soda, salt and baking power. Preheat oven to 350 degrees. Grease and lightly flour 3-9x1 Vi in layer pans. 1 put waxed paper in too. In a large bowl, beat at high speed, butter, sugar, eggs and vanilla until light (5 minutes). Do not overbeat Mrs. Marie McIntosh R.R. 5 Brussels A REAL GOOD CAKE RECIPE 1‘Zz cups boiling water 1% cups oatmeal 1 cup chopped dates Vi cup margarine 1 cup white sugar Vi cup molasses 2 eggs 1 % cups flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon Vi tsp. nutmeg Method-Pour boiling water over oatmeal, dates and margarine and let stand 20 min. Then add sugar, molasses and eggs. Mix dry ingredients then mix together. Bake at 350 degrees for 35 min. in 9x13 pan. Frosting Vi cups butter Vi cup brown sugar 2 tbsp, milk*Vi cup cocoanut or nuts Mix and put on hot cake then put under broiler for a few minutes. No Name Belgrave ANGEL FOOD CAKE ICING Grate rind from 2 oranges 1 c. of orange juice Vi c. sugar Bring juice and sugar to boiling point. Thicken to lemon pie filling thickness with cornstarch. Remove from heat and add rind. Let cool. Prepare 1 pkg. of Dream Whip or 2 c. whip cream and fold in cooled orange mixture. Joyce Vivian R.R.#2 Staffa HAWAIIAN DREAM CAKE Preheat oven to 375 degrees. Cream Vi cup butter or margarine Blend in Vi cup light brown sugar Vi tsp. vanilla Mix in thoroughly 1 Vi cups pastry flour Pressinto ungreased 9” square pan. Bake in 375 degree oven for about 15 minutes. Let cool 5 min. Spread with 1 cup well drained crushed pineapple Beat together: Vi cup melted butter or margarine Vi cup granulated sugar * egg 1 tsp. vanilla 1 cup shredded cocoanut Spread cocoanut mixture over pine­ apple. Return to oven and continue baking for about 30 min. Cool in pan and cut in squares. Yields 20 squares. Mrs. Lewis Stonehouse Belgrave RAINBOW CAKE 1 package (2 layer size) yellow cake mix 1 cup sour cream Vi cup water 2 eggs 1 package jello brand cherry, lime, strawberry or raspberry flavour Combine cake mix, sour cream, water, eggs in large bowl. Beat 2 mins, at medium speed until creamy, spoon Vi of batter into well greased and floured 10 inch tube pan. Spread remaining batter over gelatin to cover. Bake at 350 for 45 minutes until cake springs back when lightly pressed. Cool inpan 5 minutes. Remove from pan, coolon rack. Sprinkle with confectioner’s sugar if desired.
