HomeMy WebLinkAboutChristmastime Cookbook, 1980-11-13, Page 37CHOCOLATE ALMOND CHEESE CAKE In a bowl combine l‘/2 cups chocolate wafer crumbs 1 cup blanched almonds, lightly toasted and chopped 'A cup sugar 6 tbsp, butter (softened) Put onto the bottom and sides of a buttered 9'/2 inch spring form pan. In a large bowl cream together 1 'A pounds cream cheese, softened 1 cup sugar Beat in 4 eggs, 1 at a time, beating well after each additon. Add 'A cup heavy cream, % cup almond flavoured liquer (or any other chocolate or mint flavoured liquer) and 1 tsp. vanilla nd beat the mixture until it is light. Pour the batter into the shell and bake 375° for 30 minutes. Transfer to rack and let stand for 5 minutes. (The cake will not be set). In a bowl combine 2 cups sour cream 1 tbsp sugar 1 tsp. vanilla. Spread this mixture evenly on the cake and bake for 5 minutes more. Transfer the cake to the rack, let it cool completely and chill lightly covered, overnight. Remove the sides of the pan and transfer to a cake stand, and press slivered almonds, lightly toasted, around the top edge. Rhea Hamilton Auburn CHRISTMAS CAKE Leave out overnight 1 lb. butter creamed Add 2'A cups brown sugar 6 eggs one at a time 2lA cups buttermilk keep ‘/j cup out Dissolve 1 tsp. soda in ‘/j cup buttermilk Prepare fruit: 2 lbs. seedless raisins 1 lb. currants 1 lb. dates 2 pkgs, almonds & walnuts Take 4*/2 cups all purpose flour and put in: 1 tsp. cinnamon 1 tsp. mace */2 lb. mixed peel 3 pineapple rings 'A tsp. cloves 1 tsp. nutmeg Red & green glace cherries 2 tsp. cream of tarter Wash currants, raisins and dates. Flour fruit. Cream of tartar mixed in with flour and spices. Bake at 325° for half hour then turn down to 300° for 2-4 hours. Mrs. Gerald Mayburry Listowel WHITE FRUIT CAKE 'A lb. butter 1 cup white sugar 3 eggs beaten separately 'A cup milk 2 cups sifted flour 'A tsp. salt 1 tsp. baking powder 1 tsp. almond flavouring 1 tsp. lemon flavouring 1 lb. seedless white raisins 4 oz. mixed peel 4 coloured pineapple rings, cut 'A lb. red and green cherries 4 oz. blanched almonds Fold in stiffly beaten egg whites last.
