4 large apples sliced (about 4 cups)
l/j cup brown sugar
1 tbsp, lemon juice
% tsp. cinnamon
1 cup water
1 cup water
Vi cup granulated sugar
1 egg
*/2 cup buttermilk
Vi cup molasses
2 tbsp, cooking oil
1 cup flour
Vi tsp. baking powder
Vi tsp. soda
Vi tsp. ginger
Vi tsp. nutmeg
2 tsp. cornstarch
Combine apples, brown sugar, lemon
juice and cinnamon with water. Cover
and cook until apples are almost tender.
Beat together sugar, egg, buttermilk,
molasses and oil. Stir together flour,
baking powder, soda and spices. Add
buttermilk mixture and beat until
smooth. Combine cornstarch with a few
drops ofwater and stir into apples. Pour
apples into baking dish 9x10. Spoon
gingerbread over apples and bake 350
degrees for 35 minutes. Great with ice
cream.

GRACE’S CHRISTMAS PUDDING
more nutritonal and very light
1 cup butter
1 scant cup brown sugar
2 eggs
1 cup grated carrots
1 cup grated potatoes
2 cups raisins
Vi cup mixed peel
Add Vi cup candied cherries
2 cups breadcrumbs
Vi tsp. nutmeg
Vi tsp. cinnamon
Vi tsp. baking powder
Vi tsp. baking soda
Vi tsp.salt
1 cup all purpose flour
Sauce
not strong at all-quick to make
1 cup brown sugar
2 tbsp, all purpose flour (make paste with
cold water)
1 tsp. butter
Dash of salt
1 tsp. vanilla
Cook until thickened.

BAKED CRANBERRY PUDDING
2 cups buttermilk biscuit mix
Vi cup white sugar
1 egg
2 tbsp, margarine, melted
Vi cup milk
2 cups cranberries, washed, drained
lemon sauce
Mix first 5 ingredients and beat vigorous
ly Vi minute. Fold in cranberries. Spread
in greased 9 inch square pan. Bake in 350
degree oven about 45 minutes. Cut in
squares and serve warm with sauce.
Lemon Sauce
In saucepan, combine
Vi cup margarine
1 cup white sugar
3/i cup undiluted evaporated milk
Heat, stirring. Add grated rind of 1
lemon.
