CHRISTMAS EGG NOG
Beat 6 egg yolks until very light &
gradually add, still beating, 1 cup fine
sugar. Add 1 quart of cream, 1 pint of
whole milk and stir to blend. Chill for
several hours. At serving time, beat 3
egg whites with V* tsp. Salt until good
peaks form. Fold this into chilled mixture
Add 1 Vi cups brandy, rum or rye - chilled
before-hand, if possible. Turn into punch
bowl & grate a bit of nutmeg over top or
grate -chocolate bits. Ladle into small
punch servers. Serves 10 - 12, depending
on size of glasses.

REFRIGERATOR FRUIT CAKE
lVi cups seedless raisins
1 cup prunes
1 cup sliced pitted dates
1 Vi cups mixed diced candied fruits and
peels
Vi cup butter or margarine
Vi cup confectioner’s sugar
Vi cup light com syrup
Vi cup orange marmalade
1 tsp. cinnamon
Vi tsp. cloves
Vi tsp. salt
Vi cup walnuts (chopped)
5 cups graham crumbs
Method: Rinse and drain raisins and
prunes. Let stand 5 min. Drain and cool
and slice from pits. Combine with fruits
and peels. Cream butter and sugar
together. Blend in syrup and marmalade,
spices & salt. Mix lightly with fruits. Let
stand 2 hrs. or longer (overnight) if
necesseary. Blend in walnuts and
crumbs. Pack into loaf pan 9x5x5 lined
with waxed paper. Chill for 48 hrs. or
longer. Slice. Delicious.

HOLIDAY BANANA BREAD
(makes two small loaves)
Two cups all-purpose flour, stirred but
not sifted
1 tsp. baking soda
1 egg
1 cup sugar
Vi cup corn oil or shortening
3 ripe bananas, mashed (about IV* cups)
1 tsp. vanilla
Vi cup chopped dates
Vi cup marashino or glazed cherries (red
(or green)
Vi cup chopped nuts
Greasetwo 7 Vi” by 3Vi” by 2Vi” pans.
Preheat oven to 350 degrees or 325 is
using glass pans.
S-tir flour and soda together. Beat egg,
sugar, oil, bananas and vanilla until
smooth. Stir in flour, soda, dates,
cherries and nuts until just blended. Pour
into greased pans. Push batter up into the
corners of the pan. Bake about 30
minutes or until toothpick inserted in
centre comes out clean.

RICE AND BROCCOLI CASSEROLE
2 eggs well beaten
1 cup milk
Vi cup oil
2 cups cooked rice
Vi onion, minced
1 pkg. broccoli, cooked
Vi lb. cheese, diced.
Mix all together. Put in casserole. Bake
at 350° F for 30 minutes or until a knife
comes out clean.

CHERRY SURPRISE COOKIES
Vi cup soft butter
1 tsp. orange juice
1 Vi cups dessicated cocoanut
IV* cups icing sugar
3Vi oz. well drained cherries
1 cup fine graham wafer crumbs
Cream butter, add icing sugar and
orange juice. Mix in cocoanut. This will
be soft. Wrap a small portion of mixture
around a whole cherry. Roll in graham
crumbs and chill in frig.

OATMEAL CAKE
(not for the calorie conscious)
1 cup oatmeal
1 tsp. soda
Vi cup shortening (half and half)
Pour boiling water over this mixture and
let cool.
Then add:
2 cups brown sugar
1 egg
Vi tsp. salt
1 tsp. vanilla
Vi tsp. grd. cloves
V* tsp. cinnamon
1 cup flour
Bake at 350°F for half an hour or until
done.
While the cake is still warm top with the
following:
6 tbsp, melted butter
Vi cup brown sugar
1 cup dessicated coconut
Vi cup coursely chopped nuts
Vi - Vi cup evaporated milk or cream
Vi tsp. vanilla
Carefully spread topping on cake and
put under the broiler of oven until sugar
is bubbly. Be careful not to burn as it
takes only a few minutes.
P.S. THIS CAKE IS ALWAYS MOIST
