Drain, saving liquid Remove ,onion and chop coarsely, Mash potatoes; there should be two cups. Blend butter And flour together in the top of a double boiler, add milk gradually and cook until thickened. stirring con-, stantly, Keep hot over Nang water, Add onion and cheese to milk mixture, Stir until cheese is melted. Add potatoes, potato water and seasonings, Serve hot, garnished with parsley. PINEAPPLE CHEESY, (Makes six Servings) Everybody likes cheese with all- pie pie; -bUt did you ever think of what a smashing , combination cheese and pineapple might make? Pineapple Cheese Pie is our an- swer and one that we think will get an A plus every time! 1. cup pineapple juice 4 tebleSpoons'corn starch 1/4 cup granulated sugar 1/2 teaspoon salt 1 tablespoon butter 1/4 teaspoon vanilla few grains grated nutmeg 2 (20 ounce) cans pineapple ch- unks; drained - %, cup grated old Canadian ched- dar cheese pie pastry" Mix a little pineapp• le juice with cornstarch in saucepan, then add remaining juice. Cook until clear and thickened. Remove from heat and add sugar, salt, butter, vanilla - and nutmeg. Cool mixttitv while lining (9 inch) pie plate with pastry. Arrange tidbits in pie plate, "Stir cheese into sauce and pour over pineapple. Top with lattice pastry. Bake in a very hot oven (450° F.) for 12 minutes. Lower heat to 375' F. and bake 35 minutes more. Bert Shobbrook Blyth Farmers Coop Merging With Larger Group - Share holders of the Blyth Ch- eese and Butter Co-Operative vot- ed 59-4 in favor of merging, with the newly-organized United Poul- try and Dairy Co-Operative at then annual meeting in Blyth. The merger will provide the co-operatives with "a fluid milk outlet for the area, now served by other dairy co-operatives at Wingham and Seaforth, Under the new management, facilities at the Blyth plant will be made available to dairy co- operatiVes. Some of the milk will be made into cheese, some into powdered milk, depending on the market. It is expected the change will benefit area dairy far- mers. Amalgamation was expected by March • 15, with the charter of the dairy co-operatives not ex- pected before mid-summer. The meeting also elected three new directors: Martin Baan, Joseph Bunking and William Dalrymple. Other directors are George Powell, president, Kenneth Taylor, Geo- rge Watt and Edward Bell.
