Jam problems
can` be avode~al
As the season for fresh fruits in
Ontarit) arrives, many people will
want to preserve the fresh. fruit
flavors)n homemade jams and
jellies. To be sure of good results,
food' specialists at the Ontario
Food Council, ,Ministry of Agri•
culture and Food." say that it is
Very important to follow a tested
'recipe carefully.
A tested jinn or jelly recipe will
incorporate the correct pro-
portions of sugar. acid ands pect in
that must he pl'esent MI- the
successful jelling :,)1' the product.
Omitting an ingredient or
changing any of the ingredient
proportions of a ti ded" recipe will
affect the jelling power of the jahi
or jelly.
For example. always use tlk
exact amount of sugar called for
in a recipe. ,11 you use less sugar
than called for, the l'011 ab
will tICCOtt16 soft or syrupy. Too
much .sugar can cause sugar
`-‘•-• ,clyst al s, to form.
Using tow little. acid in the
recipe can cause a soft or syrupy
jelly. Too much acid can cause
weeping. Too little pectin also will
cause a syrupy prdduct. while too
much pectin can eatwe a sti "
jelly
Just as OTC proportions of
• ingredients, are important. so is
, the cooking time. if jaMs and
jellies cook longer than tile
recommended Oink.. sugal i

may become stiff, tough or
gummy.
Making your own jams • and
jellies can provide you with tasty. •

Addy and Rob have recently

becoming well. known across

The two.potters act as a pair of

Obviously many people now

They stress, however, that the
show. is not an eltelusive affair,

Besides the special works,
