minded, the magic. of onions is a
more practical'husiness; they add
flavor to all manner. of food,
banishing blandness . 'in the
simplest hamburger or the most
intricate. sauce.
There are three varieties of
onions available: red,,,yellow and"-
.White. They are graded as -Canada
No.1 . and Canada No.2, Yellow
onipns are the most common
ones. Choose firm . onions with
dry, brownish-yellow skins, with„
no signs of sprouting. Onions are
always on hand since they may be
'kept for several -weeks uncovered.;
in a dry and airy place.
The use, of onions as seasonings
"or' condiment •is well known.
However, one often forgets to
• serve•them atone, as a vegetable...
Following are -some cooking
suggestions:
To bake onion halves or•
quarters, season with salt and
butter. and, alloyv 60 ,minutes at
325°F, 45 minutes at 375°F , and
35.minutes at 425°F.
- To boil halves or whole small
onieris, add enough salted water
-p cover and allow 20 minutes.
Serve with htitter.....7„
To pan whole small onions, melt
some halter in a large heavy
frypan, 'add onions,' sprinkle with
salt and allow 30 minutes cooking -
time. Keep pan covered and
shake or stir frequently.

with salt and saute in ,butter until
j ust tender and bout 8
to 10 minutes., k
- To pressure-cook whole onions
• (2 • inches in diameter), allow
about 4 ntioutnce the
presiure has reached45 pounds.
Vet. Variety,' top .onions with
--Snur cream and chopped parsley,
or dear French dressing. Or
serve with a cheese, cream ors.
Spanish sauce. Seasoned butter
