If 1 Kad it to do
over again
(By Iris Magoon)
(From the Manitoulin Expositor, Little Current, Ontario
Now that I realize what an important part nutrition plays in
one's outlook on life and how one's actual strength to wi hstand
stress and crises is affected by one's food, I'm sorry, I n
catch on to a feW food ideai a little sooner.
If I cerld do it all over again, here are some of the things I hope
I'd do this time around:
1.I'd learn, how to make gOOd whole-grain breads from an
expert or from a good 'cookbook and how to shun the spongy
imitations.
2. To have as much raw food as possible I would have a
garden; no matter how small, even if it had to be in pots or a
window-box. I would grow lettuce and parsley, at least; and I
would sprout seeds all year round.
3. Even if it meant getting up a little earliler, I'd see to it that
every member of the family ate a worthwhile breakfast; with a
constant supply of homemade granola in the house, that would
be easy.
, 4. If I could find a farmer who sold unsprayed apples, I'd buy
'them by the bushel-or-plant a couple trees of, my own.
5. j would invest in a blender; maybe this time one with a
removable bottom, to save time.
6. And then I would really get my money's worth out of that
blender and learn to use it for all kinds of nutritious pep-up
drinks to put in thermos bottles and for pick-me..ups on a
strenuous day.
7. 1 would have some cold herb teas, sweetened with honey,
(rosehip, comfrey, peppermint), or fruit juices on tap for anyone
craving a bottle of'pop. Then I could banish from the premises all
artificially colored and flavored drinks.
8. I'd try to ep a cooky jar full of homemade oatmeal or
other healthful co kies and a supply of carob nut balls on hand
for emergency sn eking and lunch-box treats.
9. I'd never vibe children with candy bars. If there were
stockings to be filled at Christmas, I'd make the candy bars
myself from carob and nuts or buy them at a health-food store.
10. I would try to accustom the family to nuts, sunflower and
pumpkin seeds and dried fruits and get them to help make
confections with them. And I would encourage popcorn-making
for TV-watchers instead of junk foods.
11. For desserts I would substitute fruit or homemade yogurt
for cake or pie, and if there was rebellion, I'd make sure the pie
or cake was made from scratch with honey, u nbleached flour and
no thick icings.
12. To extend meat and add protein to all kinds of food I would
make extensive use of soy beans and soy products.
13. I would try to can all my own tomatoes for the winter to
avoid any possible lead dissolved by the acid.
14. Every morning, when I made the sandwiches for the
children's, or my husband's "brown bag", I'd make myself a
hearty one and stash it in the refrigerator for my own lunch
(instead of a cateh-as-catch-can snack at the kitchen counter); at
noon I'd 'pour myself a glass of milk; put some fruit and my
already-made sandwich on a tray, turn on 'some soothing music,
put my feet tip on a footstool and have a little picnic!
15. Finally, in the "Don't do as I say, do as I do" department,
I would try to encourage good eating habits in the family by
setting a good example myself so that no one would even be
temptedjo sing,
