The increase in the number of hogs
grown in Ontario has certainly been
.very large, but I do not consider that
there aro too many hogs in this pri
vine if they were only marketed
evenly through every month in the
year, w'itlislighlty increased deliveries
during June, July and August. At
the present time there are a large
number of hogs offering, both alive

but if the inarket reports aro studied
it will be found that the decline is
general throughout the United
States, Canada and England. The
majority of farmers are still follow-

years ago. There is a elass of heavy
bacon that will sell, but the finer
class of sugar cured meats required
by our customers in cities, towns and
villages must always be new cured,
that is, cured, smoked and sold in a
few weeks after the hog is , killed,
and not held in our cellars from
November or December until the fol-
lowing July or August.
Then for the English trade the
bacoa must arrive in England just
fresh cured with scarcely enough salt
to -keep it us the English people will
not buy unless it is very mild cured,
so mild indeed that it bas been sold
promptly on arrival and go into im-

These are the reasons why we re-
quire a supply of hogs every week in
the year instead of in the winter
only, and I feel convinced that this
has only to be understood by our
