Ontario Dairymen's Association,
Writes as follows :--It is believed by
many dairymen that when mine is
paid for by the percentage of butter
,fat it can be tampered with with int -
triunity. .The law, howcver,regarding
the watering, Slimming or cleterlora-
tion of milk supplied to cheese or butter
'.factories has not been taken off the
statute books. It still remains, and
if a person is found guilty of supply-
ing deteriorated milk to a cheese
factory, where either the milk is
pooled or paid for, according to its
exact value, he is liable to be fined
or punished. It is well that patrons
of cheese factories, when the Bab-
cock system has been adopted, should
thoroughly understand this and that
lie adoption of the test does not free
them from their obligation to supplyl,
pure, normal milk. No doubt many
of those who have advocated the
adoption of this new method, stated
that it would prevent the skimming
and watering of milk. This has
been somewhat misleading. It is
not claiimed that the system will ab-
solutely prevent the adulteration of
milk, but that it will take away near-
ly altogether the temptation, which,
so many cannot resist, of -making a
ittle out of their neighbors by tak-
ing off the cream or adding • water to
the milk supplied to our cheese fac-
tories. This new system by making
it so that if a patron Vvaters or skims
mill: he is lessening the amount of
bis returns from the factory, does to
this extent prevent the adulteration
of milk supplied to cheese factories.
It would be 'it suicidal policy if,
when the system was adopted,
patrons were given free scope to
skim the milk before sending it to
the factory-. It would injure our

British dealer against our goods of
being skimmed or cheese of inferior
