Pork is a top quality Canadian
meat. Over the past few years it
has, become leaner and less
wasteful. The often heard
statement that pork is hard to
digest is not true. Pork is Slowly
but easily digested.
Good quality pork hag firm,
finely grained meat, light to dark
pink in colour with white or
pinkish fat. Nutritionally speak-
ing, port supplies the same high
quality protein as other meats. It
is an excellent, source of iron, and
"the ,B vitamins - thiamine and
niacin. A serving of lean cooked
pork is comparable in calories to
lean beef or poultry.
When you want pork for frying
do you always choose rib or loin
chops? Why not try shoulder
blade chops for a change?
Compare their value on the basis
of cost per serving to see which
one will be saving, the most
pennies in your piggy bank.
Allow 1/3 to 1/2 pound per
serving.
When shoppieg for pork chops,
remember the following selection
guide.
Rib chops - contain portions of,
rib bones and are somewhat
round in shape. ..
Loin chops - contain portions of
rib bones and
Loin chops - triangular in shape
with a T-shaped bone.
Shoulder chops• - can be
identified by the small round
bone. They are cut from the
shoulder and are finer-grained
than blade chops. Blade chops -
are cut from shoulder and contain
portion of the blade bone. These
chops are much larger than rib or
loin chops.
All chops may1;,be broiled,
baked, panfired, barbecued or
braised.
Frozen chops may be thaWed
and cooked as fresh. If chops are
fried or baked while still frozen,
the cooking time should be
increased by half. Frozen chops
which are to be braised or broiled
are best thawed before cooking.
Next time you purchase pork
chops, why not go hog-wild in
your kitchen. 'Cookbooks are
brimming with tantalizing dishes.
Try them.
Tarragon-Baked Pork Chops
3 tablespoons vinegar
6 tablespoons oil
3/4 cup strong bouillon
1 tablespooe salt
1/4 teaspoon pepper
2 teaspoons tarragon
2 tablespoons chopped fresh
— paisley
12-1 inch rib or loin pork chops
Combine all ingredients except
Meat in jar and shake well. Place
chops on rack in shallow pan.
Brush with basting mixture.
Bake uncovered at 325 degrees F
to well done (about SO minutes),
brushing frequently during
baking. 6 servings.

following menu -
Ground Beef Stroganoff
(with noodles, rice or mashed
potatoes)
Cauliflower and Apple Salad
Whole Grain Bread
Cherry Tarts
Tea
Originally, "Bif Stroganof", a
Russian favorite was made from•
beef strips, sour cream and
mushroom Sauce and served on
'rice. The Russians have long
enjoyed the appeal of theo sour
taste and they use sour cream
lavishly. By using ground beef in
this recipe length of preparation,
cooking time and cost drop
significantly. For variety, stro-
ganoff can be served on noodles
or mashed potatoes.
Stroganoff, made with ground
beef, is a dish with subtle, creamy
yet spicy sauce. It is easy to
prepare, attractive and lends
itself to self-service. It is perfect
for a chafing dish or electric
skillet. hut is sewed eglia4 welt
from the kitchen in a casserole or
serving dish.
Every god buffet combines hot
and cold food temperatures.
Guests will appreciate a chunky
salad of cauliflower, celery,
tomato. cucumber and apple on -
crisp lettuce leaves. Whdle grain
bread may be the accompani-
ment. Complete the meal on a
cheery note with tea and chilly
cherry tarts prepared beforehand
and stored in the freezer.
Preparation allows more time for
entertaining when guests arrive.
Ground Beef Stroganoff
1-1/2 cups chopped onion
2 tablespoons fat
1 pound ground beef
• 2 tablespoons flour
1 teaspoon salt
1 garlic clove, minced
1/4 teaspoon pepper
1.10 ounce can mushrooms,
drained.
1-10 ounce can condensed cream
of chicken soup "
1/2 pint (1-1/4 cups) dairy sour
cream
3 cups cooked noodles
(6 ounces uncooked)
Saute onion in fat until trans-
parent. Add ground beef and
brown. Draiii off excess fat, Stir
in flour, ,salt, garlic, pepper then
mushrooms and soup. Bring to a
boil then reduce heat and simmer
uncovered 10 minutes, Stir in
sour cream and heat thoroughly
but do not boil Serve over
noodles. 6 servings.

Canadian pork now leaner
while amounts of vitamin C, At
such times, include a 'serving of
another Vitamin C rich vegetable
with the meal - - - coteelaiv;-
tomatoes or rutabaga.
For a basic food, you can't beat
potaotes. Canada's Food Guide
specifically mentions eating a
serving of potatoes daily.-
Our modern frantic pace of life
has almost succeeded in destroy-
ing the most delightful meal of all
- breakfast. Fortunately 'some of
us have not yet fallen prey to the
habit of skipping-breakfast: What
better way to start the day than by
enjoying a substantial meal with
eggs, bacon, ham or sausages,
crisp,, golden hash browned pan-
fried potato slices or even potato
pancakes.These can be prepared
in minutes and their flavour is
worth every bit of .extra work.
Potato Pancakes
2 cups coarsely grated raw potato
2 teaspoons grated onion
2 tablespoons flour
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon baking powder
2 beaten eggs
Fat
Mix potato with onion, flour,
salt, pepper and baking powder.
Combine wtih eggs just before
frying. Heat fat in frypan until a
drop of water sizzles. Drop
tablespoons of mixture into hot
fat and spread evenly. Fry until
golden brown (1 to 2 minutes each
side). Makes about 18 pancakes.
Lunch - if you or members of
your family still go home fo:
lunch, take advantage of potatoes
to serve satisfying luncheon
dishes, Try a potato soup, or a hot
or cold potato salad. Make a quick
corned beef hash with diced
cooked potatoes, celery, onion,
tomato juice and a can of corned
beef. Or combine eggs and
potatoes in a delicious and unique
",Potato Scramble". Serve with a
salad and a light dessert and
back to work.
Potato Scramble
6 slices bacon, halved
1 cup sliced onion
1/2 cup chopped celery
-3 cups sliced, cooked potato
3 beaten eggs
3 tablespoons milk
1/4_ teaspoon salt
Dash Pepper
1 tablespoon chopped fresh
parsley.
Fry bacon until crisp. Remove
from pan and keep warm. Add
onion and celery and saute until
onion is transparent. .Add potato
and saute until lightly browned (5
to 10 minutes). Combine eggs
, and remaining ingredients. Pour
over potatoes and cook gently
until eggs are set (about 3
minutes). Top with bacon strips.
6 Servings.
People have been serving
potatoes with the main meal of
the dly for more than three
centuries. French fries have
always been a steak's most
faithful compapion.
Potato and Ham Casserole
1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons fat
1-10 ounce can condensed cream
of celery soup
1/2 teaspoon salt
1 /4 teaspoon pepper
3/4 cup milk
4 cups chopped cooked potato
2 cups chopped cooked ham
1/2 cup grated cheddar cheese
Saute onion and green pepper
in, fat until onion is transparent.
Add soup and seasonings.
Gradually add m,lk and stir until
smooth. Mix potatoes and ham in
greased baking dish. Pour soup
mixture over top and sprinkle
with grated cheese. Bake at 350
degrees F until bubbling. (20 to 25
minutes). 6 servings.
