The often heard statement that pork is hard to digest is not true. Pork is Slowly but easily digested. Good quality pork hag firm, finely grained meat, light to dark pink in colour with white or pinkish fat. Nutritionally speak- ing, port supplies the same high quality protein as other meats. It is an excellent, source of iron, and "the ,B vitamins - thiamine and niacin. A serving of lean cooked pork is comparable in calories to lean beef or poultry. When you want pork for frying do you always choose rib or loin chops? Why not try shoulder blade chops for a change? Compare their value on the basis of cost per serving to see which one will be saving, the most pennies in your piggy bank. Allow 1/3 to 1/2 pound per serving. When shoppieg for pork chops, remember the following selection guide. Rib chops - contain portions of, rib bones and are somewhat round in shape. .. Loin chops - contain portions of rib bones and Loin chops - triangular in shape with a T-shaped bone. Shoulder chops• - can be identified by the small round bone. They are cut from the shoulder and are finer-grained than blade chops. Blade chops - are cut from shoulder and contain portion of the blade bone. These chops are much larger than rib or loin chops. All chops may1;,be broiled, baked, panfired, barbecued or braised. Frozen chops may be thaWed and cooked as fresh. If chops are fried or baked while still frozen, the cooking time should be increased by half. Frozen chops which are to be braised or broiled are best thawed before cooking. Potato Pancakes 2 cups coarsely grated raw potato 2 teaspoons grated onion 2 tablespoons flour 3/4 teaspoon salt 1/8 teaspoon pepper 1/2 teaspoon baking powder 2 beaten eggs Fat Mix potato with onion, flour, salt, pepper and baking powder. Combine wtih eggs just before frying. Heat fat in frypan until a drop of water sizzles. Drop tablespoons of mixture into hot fat and spread evenly. Fry until golden brown (1 to 2 minutes each side). Makes about 18 pancakes. Combine eggs , and remaining ingredients. Pour over potatoes and cook gently until eggs are set (about 3 minutes). Top with bacon strips. 6 Servings. Potato and Ham Casserole 1/2 cup chopped onion 1/2 cup chopped green pepper 2 tablespoons fat 1-10 ounce can condensed cream of celery soup 1/2 teaspoon salt 1 /4 teaspoon pepper 3/4 cup milk 4 cups chopped cooked potato 2 cups chopped cooked ham 1/2 cup grated cheddar cheese Saute onion and green pepper in, fat until onion is transparent. Add soup and seasonings. Gradually add m,lk and stir until smooth. Mix potatoes and ham in greased baking dish. Pour soup mixture over top and sprinkle with grated cheese. Bake at 350 degrees F until bubbling. (20 to 25 minutes). 6 servings.
