The Pan-Amerioan Dairy Test
There is no other condition which the
cows have to contend with which makes
se much variation in the flow of milk as
does that of atmospheric tempszature.
So long as the temperature is about the
seventies the cows keep up a good, even
flow of milk, but just as soon as the there-
mometer goes up in the eighties, down
goes the milk, no matter what the feed
is. Green corn, cut, and green millet
have taken the place of silage for the
past ten days and the cows were doing
well on this feed till the present hot
spell same upon tie which commenced on
the 19th list and the cows are now suffer-
ing from the beat as much as they have
done any time since the teat commenced
with a consequent ehrinkage in milk.
There is the greatest variation in the
heavy milking breeds, they drop the
moat when the conditions are unfavor-
able and they respond more quickly
when the conditions are favorable. The
week ending July 23rd was the most
trying week of the season until the pres-
ent, and when the cooler weather came
in about the first of August there was a
good increase in both milk and butter in
meat of the breeds, but at the present
writing the theremornoter stands from 85
degrees to 86 degrees and the milk has
again fallen off badly.. Up to the present
time ill the cows have been milked three
times daily-5 a. m. 12.30 p. no. and 8
p. in. but there has been much debating
rus Co whether tide is the wisest soured
under such trying conditions, with the
result that three of the American herds-
men broke over the lines yesterday and
are now milking Only twice per daY. The
result will be closely watched during the
next month, as aomo claim that more
milk and butter will be produced by
tines, milking, than by two milkings,
and those interested will do well to watch
the result, which will be given from time
to time as the test goes on.
During the cool weather the Holateine
made the greatest gains with the excep-
tion of Meg as she had a week'. sickness,
which put her back very much in her
milk. The cost of feed, however, still
keeps them down to fourth Or fifth place
on the butter test. The Guernsey, Mary
Marshall, has again asserted her supre-
macy as queen of the barn and headed
the list with $2.09 profit while last week
she gave a profit of $2.37. The Jersey,
Primrose which headed the list two
weeks ago with $3.33, stood second last
week $2.22 profit, and this week with
$1.96.
The Jerseys as a breed, stood at the
head last week with a lead of 95cts. but
they have lost heavily during the past
week just ended, Aug. 20th, and the
Guerneeys have increased their lead by
56ete. making their total lead at present
$6.66. It may not be generally under-
stood bow the Guernseys got such a lead
of the Jerseys during the first month
but, in justice to the other breeds, it
might be stated that the Guernseys were
all in fine working trim at the beginning
of the test. Four of them freshened in
April, (two of them after they arrived on
In the making of cheese the greater
part of the sugar passes off in the whey
and comprises about 70% of the'aolida in
whey and of which no account would be
token if a cheese test had been used as
a basia for a prize but in this test for
total solids a pound of milk sugar figures
the same aa a pound of Casein or a pound
of Milk Fat.
In the competition for this prize the
order of the herd is completely changed
and at the present writing they stand as
follows :—
Huleteins $173 91 profit
Ayrshire., 162 55 "
Brown Swiss 145 12 "

When the teat commenced there were
only a few papers in the United States
that Look any notice of it. but there are
now over two hundred asking for reports
from the Associated Preen, thus allowing
the intense interest which has been
created all over the country. At the
World's Fair in 1893 the teat extended
over only three months, while this teat
is expected to cover a period of six
months and it will be a test of endurance.

1st. Mary Marshall, (Guernsey) stand-
ing first with $39.03, Mayflower, ,(Red
Poll), second, $33.79, and Primrose,
Jersey), $33.66. The whole of the Red
Polls in the test are owned by Capt. V.
T. Hills of Delaware, Ohio, who has
made some remarkably good sales as a
result of his cows' record here.
The Canadian cows, as e whole, are
making a good record and are a much
finer lot of cows than the competitors
and they will all give a good account of
themselves by the time the teat is closed.
There are four prizes given In this
test—one for moat profit on estimated
butter as revealed by the Babcock test,
the butter valued at 25cts per lb.—one
prize for most butter by the churn test,
one prize for total solids in the milk
valued at 9cts per lb. and one prize for
total solids plus the gain or loss in flesh
of the cows valued at 3cta per lb.
The trot is creating the greatest inter-
est and is the one on which the profits
an tar, have been bated and published.
The churn test is not considered to be at
all reliable on account of only one day's
milk from each herd per week being
separated and churned, the result for the
Week being estimated from that one day's
churning. There are so many contingem
cies which might and do arise to effect
the product of one particular day that
the result can only be approximate at
beet. The prize for total solids is based
on the value of the whole milk aa food,
estimated froth the wholesale price for
city delivery, and in thie, the sugar of
the milk figures very largely, forming
about 33% of the total solids.
