Have you ever wondered why
vegetables cooked by the Chinese
have such a marvellous texture
and excellent flavor and color?
These characteristics can be at-
tributed to their method of cook-
ing vegetables - 'stir-frying'.
We have borrowed this method
and call it panning' What a
lovely way it is to prepare the
many fresh Canadian summer
vegetables on the market now!
Panning is a simple way of
cooking vegetables on top of the
stove. Rapid cooking preserves
their natural' color, flavor and
optimum food value.. They are
especially attractive when in-

vegetable is used, start those
that require the longest cooking
first.
To pan vegetables, melt butter
in a large heavy frypan, add
prepared vegetables, and sprin-
kle with salt. It may be neces-
sary to add a little water to
some to prevent scorching.
Cover, frypan, heat quickly to
form steam, then reduce.heat and
cook gently until vegetables are
tender-crisp. Shake or stir fre-
quently to avoid sticking and,
serve the vegetables already

. Buy fresh vegetables in sea-
son when their price is lowest.
Handle -them as. little as possible
so as not to damage them.
. Vegetables sold at a re-
duced price may be a good buy

but there may be considerable.

wilted.
Use a' vegetable peeler to
avoid wasting any vegetable or
loss of the nutrients which are
found under the skin or peel.
Overly ripe cucumbers are
not appealing. Avoid those which
are yellow in color and large

cauliflower, cabbage, salad
greens, celery and broccoli, re-
member that the outer stalks and,

The, little fruits of summer
' Raspberries and blueberries
are two very popular candidates
for' jam making. However, too
often we overlook *the little red
and black currants which make
delicious jams and jellies alone
or in combination with other
fruits. If there -is not enough
time now to make jam from the
fresh currants they may be frozen
for use at a later time. Whole
currants should be washed and
stemmed before packing them in
freezer containers. For jelly
making the juice may be extracted
from mature currants and frozen.
RASPBERRY
AND RED CURRANT JAM
4 cupsYaspberries (1 quart)
4 cups red • currants (1 quart)
6 cups sugar
Remove currant • stems.
Combine fruits and crush. Add
sugar, mix well and let stand
1 hour. stirring constantly until
sugar is dissolved. Bring to
boil and boil rapidly to jam
stage, (about 20 minutes). To
test, ,remove from heat pour a
teaspoon of jam on *lied plate
and chill quickly. If Jam does
not set, boil a few minutes more,
then test again.- Remove 'from
heat and. skim. Stir 5 minutes;
pour into hot sterilized jars and
seal. Makes about 8 cups.
