greens
Crisp and cool salad greens
prepared and stored properly
are the most important ingred-
ient in successful salad mak-
ing. While all salad greens,
should be refrigerated in tightly
closed plastic bags or contain-
ers, they may be grouped accord-
ing to the care they require and
their optimum storage time.
Iceberg and Boston lettuce;
romaine, watercress and mint
should be trimmed, washed,
thoroughly drained immediately
and may be refrigerated up to, a
week. Parsley prepared in the
same way will keep three to four
weeks in a plastip bag or glass
jar with paper towels in the

up to a week. Escarole, endive
and chinese cabbage should be
stored unwashed up to a week.
Fall or winter cabbage and early
summer cabbage may be kept
two weeks, but spinach, unwashed
only a day or two.
The best salads are made
with a variety of salad green
combinations: iceberg lettuce and
spinach; leaf lettuce and
escarole; romaine and curly en-
dive; iceberg lettuce and water-
cress; leaf lettuce, spinach
and curly endive; Boston lettuce,
French endive and watercress.

are absolutely clean.
* Strive for Color - Choose
salad greens with particular
attention to variety and . color.
Try combinations of some dark
and some light, some tangy and
some only slightly bitter.. Tom-
atoes, mushrooms, cucumbers,
strips of meat or cheese will
provide variety in color,
texture and flavor. Let your

Tear , rather than cut greens
into bite-sized pieces. Make
sure your bowl is large enough
to hold the greens during tossing.
If you wish, rub the bowl with
garlic for a subtle flavor, then
omit it from the dressing. Add
the dressing just before serving
and toss lightly but thoroughly so
that each piece is boated.
Serve these two terrific
tossed salads to your family and
friends this summer. They're
the perfect accompaniment to any

2 tablespoons chopped onion or
sliced green onion
1/2cup sliced fresh mushrooms
1 -men pepper, cut in rings
1/2cup tomato wedges
1/2teaspoon salt
1/8teaspoon pepper
1/3cup French or similar dres-
sing.
Combine salad greens with
other vegetables ( except
tomatoes) and toss lightly. Chill.
Just before serving, add toma-
toes, salt, pepper, and dressing.
Toss to coat pieces. 6 servings.
LETTUCE SALAD
1 head iceberg lettuce
1/2cup whipping cream
1 teaspoon sugar
1/2teaspoon salt •
Dash pepper
.1 tablespoon lemon juice
2 tablespoons finely chopped
green onions.
Wash and drain lettuce thor-
' oughly. Tear into small pieces.
Whip cream until stiff. Stir in
remaining ingredients. Just be-
fore serving, add to lettuce and
