Commerce held its Annual Bingo
and Turkey Draw on November
12, 1971, at the Brodhagen Com-
munity Hall. A large crowd at-
tended.
Bingto winners were as

Council Sets
'71 Inaugural
East Wawanosh Council met
on November 2nd, in the Bel-
grave Community Centre Room
with •Reeve Roy Pattison pre-
siding and all the members pres-
ent.
Motions adopted included:
- that the Inaugural meeting of
the year 1972 for the Township
Council be held on January 4th,
1972 at 1 p.m.
_ that we apply for interim
subsidy in the amount' of
$97,041.86 under the Public -
Transportation and Highway Imp-
rovement Act on expenditures in
the year 1971.
- that the Road Accounts of
$7,046.77 and the General Ac-
counts of $16,501.29 as pres-
ented be passed and paid.
The future is in our hands.
Most Canadians believe in that
thought. They believe it with 'all their
nearts. Others believe in it, but won't
lift a finger to do anything about it.
Not all fingers are born equal. That's
why, if we're going to keep this
country towther, some .need more
lifting than others.
Perhaps, had Canada not been
blessed with so vast a geography
and an archipelago of people along
its southern edge, our problems might
have been different..But here we are.
A population stretching east and west,
dotted with islands of self-interest.
So what do we do about it?'
Build fences around its separate '
regions?
There is a lot we can do. First
thing, Iv e should start caring and
understanding. Not just about our own
neighborhood, but abdut all of
Canada. We've got to help all those
people and ports of Canada that need
it most.'How else can we keep our
country together?
Ther'e is a have Canada, and a
hove-not Canada. The have•nots from
coast to coast need our help, It will
take time and in the process we may
make some mistakes. But the first step
is to want to help.

standing our fellow Canadian, surely
we'll come together. If we don:t,
come apart.-.Do we want to hove
Canada, or hove•not Canada?
Only we have the answer.

Former Seaforth Resident Dies
Mrs. Christopher Cheoros,
77, of Mitchell died in Strat-
ford General Hospital Sunday,
after a lengthy illness.
The former Verna Padbury,
daughter of the late Mr. and Mrs.
Arthur Padbury, she was horn in
Chatham and lived in Seaforth
before moving to Mitchell 35
years ago.
Mrs. Cheoros was a mem-
ber of MainStreet UnitedChurch,
Mitchell.
Her husband died in 1953.
She is survived by two sons.

Pork Chop
The economy-minded home-
maker should take a good look
at pork shoulder chops. These
chops are tender and very flavor-
ful, and can be prepared by the
same cooking method as the more
expensive loin or rib chop, say
home economists.
There 'are two types of
shoulder chop, the blade and the
round bone. The blade chops are
cut from the °Boston butt. They
are larger than loin or rib chops
and contain a small portion of
the blade bone. The round bone
shoulder chops are cut from the
picnic shoulder, and are also
larger than the loin or rib chops.
They have a small round bone
and a finer grain than the blade
chops. Fbr the shoulder chops,
estimate one chop per serving
or three servings to the pound.
pork shoulder chops may be
panfried or baked, but they are
at their best when braised.Brais-
ing is quick and easy. To
braise, brown chops 3 or 4
minutes on each side over
medium heat, add a small amount
of liquid (water, apple or tomato
juice, apricot nectar, etc), reduce
heat to simmer, cover pan, and
allow 15 to 20 minutes to cook.
STORING HAM AND BACON -
Because ham and bacon are
cured, some people think that they
can be kept a very long time.
This isn't true, say home
economists. Today's cured pork
products receive only a very
light salting and as a result they
are perishable foods that must
be kept under refrigeration, like
any other fresh meat. Vacubm-
packaged ham and bacon will keep
safely for 10 to 14 days in the
refrigerator if the package is
left unopened. Ham or bacon that
is nbt vacuum-packaged will keep
only one week. Ham slices should
be, used with 3 ,Or 4 days. Left-
over cooked ham that has been
smoked will keep safely for one
week in the refrigerator.
Ham and bacon can be frozen,
but only for a very short time.
Long-term freezer storage is
not recommended for cured
meats, because the salt used
causes flavor changes and the
meat loses quality rapidly. Re-
commended freezer storage time
is one month.
It is safe to freeze leftover
ham for one month if it has not
been previously frozen. A ham
that has been frozen, thawed,
and cooked should be used im-
mediately. It is not considered
safe to refreeze or store this
ham in the refrigerator.

Heath-Leslie funeral borne, Mit-chell and the funeral service
was held Tuesday, at 2 'p.m.
with burial in Woodland ceme-
tery, Mitchell.
