Pumpkin
Makes More
Than Pie
That leering Jack-o'-lantern
has more potential than you sus-
pect. The pulp from its hollowed
shell is the inexpensive base for
more recipes than tire traditional
pumpkin pies and tarts. Steamed
pumpkin, mashed to a smooth
puree, j ean be frozen or canned
for use ,In anything from soup
to ice cream. One pound of fresh
pumpkin will make about one
cup of puree.
For a not-so-traditional idea,
try creamy pumpkin soup, hot or
cold, as an appetizer. .Use the
puree in spicy pumpkin pancakes
with maple syrup; 'in crumb-
topped custards with Cheddar
cheese or bananas; in pumpkin
ice,.cream dotted with almonds;
or in cakes, muffins and quick
breads.
Pumpkin, a member of the
squash family, Is usually neg-
lected in the vegetable course.
It may be served in the same
ways as squash or sweet potato-
balced, steamed and maned, or
glazed. Pumpkin chunks may even
be pickled with cider vinegar
and ginger. •And don't forget to
toast the seeds!
Buy several pumpkins while
they are in season, suggest food
specialists at the Ontario Food
Council, Ontario Department of
Agriculture and Food. Look for
ones that are heavy for their
size, with stems intact. Remov-
ing the stems leaves a wound
for decay to begin.
