Soak beans overnight in cold'

water. biain beans; save liquid.
Add bean liquid, salt, pepper,
sugar and bay leaf to beans.0 over
and cook until • beans are tender.
(about 2 hours). Add vegetables
and continue cooking until tender
(about, 30 minutes). Add milk.
Heat to boiling. Makes about 8
cups.

SEASONINGS • - Simmer one of
the following herb's or spices in
2 to 3 tablespoons butter'for 1 to
2 minutes before adding enough

marjoram, tarragon OR thyme,
1/2 teaspoon salt
Dash pepper
Dash paprika
Stir and cook until thick (about

• In Canada, carrots are an
important vegetable crop and,
although 'they 'are grown in all
provinces, the largest production
is in Quebec and Ontario. Con-
sumers usually buy carrots in 3
or 5 pound plastic bags: 'They are
graded Canada No. 1 and should
have a minimum length of 3 1/2
inches. If they are washed this
will be indicated on the bag.
Unless the urban shopper has
special storage facilities it is
wise to purchase carrots insmall
quantities. They may if
kept where it is warm and dry.
One and one-half pounds or about
6 to 9' medium carrots will be
enough for 6 servings.
Carrots are one of the ' best
liked vegetables and they find
their way into such family favor-
ites as stews, casseroles, meat
loaves and meat pies as well as
soups and chdwders. * They are
a fitting companion to all types
of meat and poultry, and may be
shredded and used in steamed
