can get away with a single beam,
provided you comply with the
requirements and limitations
specified under the Highway
Traffic Act, If you have a
CONCORD GRAPE SAUCE
2 cups stemmed washed Concord
grapes
6 tablespoons sugar
Dash salt
11 tablespoons cornstarch
Slip skins from grapes. Bring
pulp to a boil and simmer for
5 minutes. Press through a sieve
to remove seeds. Combine pulp
and skins. Mix sugar, salt and
cornstarch. Add to grape pulp
and cook stirring constantly un-
dl thickened and clear (about
5 minutes). Makes about 1j cups.
FRESH PLUM SAUCE
3 cups coarsely choppedplums prune
1 teaspoon grated orange rind
1 cup water
cup sugar
11 teaspoons cornstarch
1 teaspoon salt
1/8 teaspoon" cinnamon
1 tablespoon butter.
Set aside 1 cup of the plums.
Add orange rind and water to
remaining plums. Cover and
simmer until plums are tender
( 10 to 15 minutes). Press
through sieve. Mix cornstarch,
sugar, salt and Cinnamon. Grad-
ually add sieved plums and, cook,
stirring constantly until thicken-
ed and clear. Add butter and
remaining 1 cup plums. Makes
about 14. cups.
FRESH PEACH SAUCE
1 cup peach puree (4 or 5
peaches)
cup sugar
1' tablespoon cornstarch
Dash salt
cup boiling water
1 cup diced peaches
1 tablespoon lemon juice
Few drops almond extract
(Optional)
Peel peaches and press through
a coarse strainer. Mix dry in-
gredients in top of double boiler,
add boiling water and peach
puree. Cook over dire& heat,
stirring constantly until thicken-
ed •(about 5 minutes). Add diced
peaches and place over simmer-
ing water 5 minutes longer. Cool
and add flavorings. Makes about
18 cups.

AND COOKING'
Delicious, succulent, fresh
CHICKEN AND PEAR
SALAD
' 2 cups cooked chicken,, cut in
stips
2 cups peeled diced pears
1 cup thinly sliced celery
cup shredded carrt6t
teaspoon salt
1/8 teaspoon pepper
2 tablespoons French dressing
1 clip diced process Swiss cheese
2 tablespoons mayonnaise
Lettuce cups
My-chicken, pears, celery
and carrot. Add salt, pepper
and French dressing. Cover and
chill 2 hours, tossing Once or
twice. Just before serving add
cheese and mayonnaise. Toss
lightly. Serve in lettuce cups.
6 servings.

ity in certain pickles, such
as "Nine Day Pickles".

and chutney differ?
A., ' The term "pickles" applies
to vegetables and fruits pre-
served singly or mixed and
usually, whole, in vinegar,
mustard, etc. , and usually
flavored. Relishes include
savory foods prepared from
mixed chopped vegetables
„orfruits, either uncooked,
pickles or preserved. Chutney
is a well-seasoned cooked
relish, often having a smooth
jam-like .consistency.
