BARN RAISING IN McKILLOP
Mennonites from the Wallestein area were in McKillop Township last week to assist Archie Smith erect a frame barn. A number
of neighbors as well were on hand for three days to rebuild the franie structure which Mr. Smith recently purchased.. The barn was
torn down and moved then rebuilt. The building replaces one earlier lost in a fire. (Staff Photo)

What is the best way to
store salad greens?
A. Store vegetable greens with-
out washing because excess
moisture during storage in-
creases the rate of spoilage.
To keep them from drying
out in the refrigerator, store
them in the crisper or in
plastic bags. Be sure to wash
-the greens and- drain them
well before using,
Q. What are the various types of
lettuce one can buy?
A. There are three main variet-
ies of head lettuce. Iceberg
has a firm head with medium-
green outer leaves and pale
inner leaves. Boston or Butter-
head has a loose head with
soft, waxy green leaves. Ro-
maine or Cos has an elongated
head with dark-green, coarse
outer leaves and bleached in-
ner leaves. Leaf lettuce con-
sists of loose, nonheading bun-
ches with bright,-green leaves.
Q. What causes brown looking
stains on the outside leaves of
a head of lettuce?
A. Browning of lettuce is due to
the damage of the cells. When
the,outside leaves show brown
spots, this is an indication .
that the lettuce head has been
poorly handled. -Lettuce also
browns when it's cut because
of the leakage of a substance
from the cells which helps to
seal the cut.
Q, How does one get the diff-
erent layers of a gelatin mold
to 4tay together without slid-
ing?
A. To ensure that the various
gelatin layers will stick to-
gether when they're u,nmold-
ed, the gelatins should be of
the same consistency when
turning one"mixtute into an-
other.
