Salads
Any time is salad time but
during the month of July most
I Canadians will be eating local-
ly grown salad vegetables. July
24th to August 2nd has been of.,
ficially declared National Salad
Week by Agricultural Minister
Bud Olson.
Canadians are eating fnany
more salads than they did twen-
ty years ago. This is undoubted-
• ly due to the greater variety of
fruits and vegetables available
and more speedy and efficient
handling of them, In order that
'these foods do not retain the
heat of the sunny fields, th8y
are cooled after harvesting and
kept refrigerated. Great effort
is taken by producers, proces-
sors, wholesalers and retailers ,
to bring this perishable produce
to the, consumer while it is in
top condition.
A great variety of salad veg•
etables goes into salads. This
includes various types of lettuce
endive and escarole, green
onions and peppers, and of
course the ever popular tomat-
--oes; eeleryrrath'thes•-and-eac-
umbers. To' assist you in get-
ting salad diversity into turn-
Mer meals the home econimists
of the Canada Department of
Agriculture have prepared a
new leaflet "Outdoor Salads"
which contains information on
the care of salad ingredients,
how" to take them with you to
your favorite outdoor eating
location and recipes for differ-
ent types of salads. You may
obtain your free copy of "Out-
door Salads" by writing to In-
formation _Division, Canada. De-
partment of Agriculture, Ottawa.

that weekend at your favorite
campsite. Dad and junior have
the camping gear ready so it is
up to mother to plan the food
for a couple of days. -Home
economists would like to help
her plan some simple main
dishes. The supply of salad in-
gredients can be trimmed, wash-
ed and enclosed in plastic bigs
before leaving home.. This will
make for easy handling - wheth-
er in a main course, an accom-
panying salad or for between
meal nibbling!
For Friday dinner en route or
at the campsite the home econ-
omists suggest tender "Fried
Chicken", If it is tb be 'eaten
hot it should be transportedln
the pan in which it was cooked.
Cover the chicken, then wrap
pan and all in several thicknesses
of newspaper to act as insulation.
Chicken must be kept hot, never
lukewarm. This method is only
recommended if it can be eaten
within twq hours after cooking.
If you prefer, the chicken pieces
:.may be cooked and refrigerated
"on Thursday then transferred to
the cooler just before leaving
home. The prepared ingredients,
for the tossed salad can be se-
lected from the plastic bags. The
bread or buns may he buttered
before leaving home. Mother's
home-made cookies or ginger-
bread could be an "extra" to
accompany, the pre-washed fruit
which will he eaten as dessert.
For a main dish salad the
home economists of the Canada
Department of Agriculture sug-
gest "Hearty. Picnic Salad". It
contains canned baked beans
and shredded cabbage as well

When the weather forecast .„ as sliced, cold wieners. If you
indicates clear skies and climb- prefer a hot Meal it is simple to
ting temperatures,, it's time for have two or three recipes which
require one burner only. One of .
these is "Onion and Beef Medley"
This can be made in a frying
pan in about 20 minutes if you
brought minced beef in your
cooler.' There is a generous
quantity of onions in this recipe,
but where will they smell better
than cooking on a camp stove!
They could be sliced at home
and packed in a covered con-
tainer or wrapped in aluminum
foil. A can of mixed vegetab- ,
les together,with seasonings
complete the savory dish. If
the outdoor appetites have been
really sharpened, a tin of spa-
ghetti with tomato sauce will
stretch this meal.
To finish up that carton of
eggs, why not scramble them in
the frying pan together with
cream-style corn for another
easy main dish. Cubes of process
cheese`added at the last will
contribute extra "staying power",
Scrubbed carrot sticks or other
raw vegetables, will make a
crunchy complement.
