Or are you too busy trytne to keep up with today's duties and dates? A reader points cart that young and old alike can be in hospital Or weeks at a time and never receive even one visitor card. A widow in a downtown apartment, children all away, cooks a solitary meal and then falls into bed exhausted night after night without any company at all. Even where there are people around to give service, there is loneliness if there is no one to listen when the person with a problem wants to open up. If we are too busy to think of our lonely ones, too occupied to write a note or make a phone call that will reach out to say "I love you", then we are just too busy to be much use to anyone. Mr. and Mrs. Joseph C. Thompson of Goderich observed their 50th wed- ding anniversary on December 5th. The home of Mr. and Mrs. Ken Moon, Londes- boro, was the scene of a family dinner in honor of Mr. and Mrs. Hugh Blair, of R.R.1, Belgrave, on the occasion of their 40th wedding anniversary. Mr. and Mrs. Stewart Ament were honored by Hulled friends prior to their taking up residence in Blyth. The Auburn Women's Institute held their annual family night on Decem- ber 4th. (Ted) Bartlett, Vice- President and General Manager of Paul Mueller (Canada) Limited, has been ap- pointed as sales manager of the Canadian Company effective immediately. She visited a friend, Mrs. HuguetteHohen- feldt who now resides in West Berlin and who had been a n exchange student in 1962 when she spent three weeks with Miss Kieffer. Miss Kieffer also visited her cousin, Rev. Father Michael Kieffer at the Vatican and through him had an audience with Pope Paul 6th. She will be resuming her nursing career shortly. Mr. and Mrs. Robert Golley of Morris quietly marked their 56th wedding anniv- ersary recently. In the Clinton News-Record, which had a new face lifting this past week, reports that three Clinton youngsters while playing near the Brewers Retail Store found some "buried treasure". They found a radio and two cartons of cigarettes. Reporting the find to the Police Chief, a further in- vestigation took place and they discovered a sock full of 1'7 watches and$19.60. Chief Westlake said he felt the articles were from a past break-in. Mr. and Mrs. Fred Mote of Bayfield marked their 50th an- niversary- recently and Mr. and Mrs. Clifford J. Stewart, Clinton, observed their 45th wedding anniversary. ti The C hesley Enterprise has uninteres- ting story which refers to what residents of Sullivan Township consider to be one of the oldest trees in the district. The tree, an elm, was cut down recently, since it was attacked by the Dutch Elm Disease this past summer, indicates, according, to the rings on the stump, to be approximately 500 years old. In Ontario today, over 90% of all turkeys are sold frozen. These turkeys are killed, dressed and 4 fast-frozen within 24 hours. When thawed and cooked these birds have all the fresh juicy flavor of a newly-killed bird. The stor- age 'conditions are very import- ant to maintain this high quality. „ At temperatures of -5 to 0 degrees turkeys may be held up • to 18 months. Supermarkets usu- ally sell frozen turkeys within three months. Once a bird is in a home freezer temperatures of -5 to 0 degrees must be main- tained to preserve quality, say home economists. Since most turkeys are mar- 4 keted frozen it is important to recognize a bird that has been held under the best conditions. Look for birds that are solidly frozen, with a uniform white color. Make sure there are no signs of freezer burn or ice crystals in the bag. Freezer burn may be recog- 4/ nizedd by a bleached, chalky, mottled appearance on the skin of the bird. This is caused by a loss of moisture due to poor packaging or thawing and refreezing. Thawing and refreez- ing can be dangerous, as there is no way of knowing how long the turkey has been poorly stored. Additional signs of thawing are crystals of ice in the bag or a reddish skin color. Freezer burn and thawing cause loss of mois- ture, and as a result the turkey will be drier, tougher and less flavorful. FRUIT STUFFINGS Dressing the fowl is tradi- tional at Christmas. For many years recipes have suggested the addition of chopped cranberries, dried apricots, raisins, apples or other fruits to provide extra flavor. Recently it has been found that these fruits not only improve the flavor of the dressing, but the keeping quality as well. The fruit and other ingredients such as eggs and broth should not be added to the breadcrumbs until it's time to stuff the bird. Home economists stress the import- ance of stuffing the bird just before it is to be roasted. After roasting remove all stuffing from the cavity, store separately, and use within 3 or 4 days. To make a fruit stuffing from a basic bread stuffing (4 cups of bread crumbs), use one of the 14/ foil:1111V variations: • A - 2 cups apples, chopped fine Nut and Raisin - 1/2 cup chopp4d pan juices. Slicing the turkey roll at an angle is suggested by home economists. This manner of cut- ting will result in a more tender slice of meat. This boned, rolled turkey product may be all white meat or a combination of white and dark meat. There is no waste, and it is easy to cook, slice and serve. Turkey roll may be marina- ted for several hours or over- night in liquid salad dressing (French, Italian, Sweet and Sour, etc.), wine or fruit juice and a little soya sauce before roasting. Then rub the skin liberally with soft fat or salad oil, wrap the roll loosely in aluminum foil, and roast at 300 degrees to 325 degrees. Cooking time will vary from 2 1/2 to 4 hours depending on the size of the roll. Allow approximately 1 hour per pound. For best results use a meat thermometer inserted into the center of the roll midway between the ends. The thermometer will read ,185 to 190 degrees when the meat is fully cooked. For a nicely browned top, open the foil for the final 1 to 1 1/2 hours and baste once or twice with the BURN'S Hot Dog Wieners .
