tomatoes seasoned with:
sugar 'bay leaves
lemon juice celery, diced
onions salt and pepper
r Bake in a moderate oven,
350 degrees F, in a covered dish
until chops are tender.

CANNED' FOODS
Q. We left some'canned goods in
our cottage over winter and
• they have frozen. Will-they-be
safe to use this spring?
A. If the cans are still tightly
sealed and no breaks, bulges
or rust are present, they will
be safe to use. You may find
that the contents are soft in
texture and that the color has
changed somewhat.
What causes the hissing sound
when a can is opened?
A. This indicates that the can has
been tightly sealed and that
there is a vacuum inside. The
hissing,sound is caused by air
rushing in to fill the vacuum.
Should dented cans of, food
be used?
Dented cans, of food should
not • be used if the, dent is
severe enough to cause leak-
'age. Otherwise', the dent, does
not necessarily indicate that
the contents will be affected.
Q. What does the term"vacuum
packed' corn 'mean and why
does it , have so little liquid?
A. 'Vacuum packing is a special
method of canning, in which
all the air is exhausted and
very little liquid is needed
in this process.

DEAR DORIS - I am feeling
very hurt. I am the oldest in a
family of seven girls and mar-
ried. My two younger sisters
have been married recently
and in neither case have I been
asked to be matron of honor.
They have instead chosen
. other sisters and girl friends to
be their attendants; and they
have selected my young daughter
who is now four to be flower
girl.
Am I just feeling sorry for
myself?

DEAR HURT - Let's put it this
way: You are the only member
of the family lucky enough to
have a charming little girl to
serve as flower girl and pro-
bably steal the show! Your sis-
ter appreciates this contribution
and considers that this is more
than enough to ask of you.
And there is a limit to the
number of bridesmaids one can
ask.
You did& • dicate that you
had missed out any of the
' fun or celebrations. I am left
wondering just what the setup
was when you got married.
Life is too short to allow
hurt feelings to stand between
sisters.

ses. My knees seem to be larger
than the rest of my legs.

be large - but is this all bone?

DEAR UNDECIDED - Now that's
different. One hardly calls a man ,
of 28 a boy, and I was picturing
you as a couple in your teens or
early 20s. Let's hope you have
reached an age of maturity when
age differences don't show so
much - pSychologically, I mean.
'If your feeling is that • you_
are marrying a mature man and
will be able to accept him as
the dominant force in your mar-
riage; the age difference doesn't
count.

nieces eyes are slightly crossed.
She is just two. I ventured to
suggest this to my sister (her
mother), but was indignantly told:
"No, her eyes are perfect!"

DEAR AUNTIE - With small
babies, eyes may seem to be out
of line bechuse of facial pro-
portions and the width of the
bridge of the nose. But by age
two, it should be fairly evident
whether there is any suggestion
of a squint,
Evident, that is, to anyone
used to looking for it. Some-
times parents are just so used
to their own child that they are
the last to see any irregularity.
It will not cure itself. Re-
sults are good if a squint is
treated early, especially before
the age of two. Why parents
won't take action on the least
suspicion is beyond me.
Less than half the children
needing glasses have them.

Mrs.Allan McCall
The Walton Unit held their
annual bazaar in Duff's United
Church, Wednesday evening when
the guests were received in the
auditorinm of the chide' by Mrs.
Allan McCall and Mrs. Gerald
Watson. prior to the devotional
service music was supplied by
Mrs. Ray Huether at the piano
anji Mrs. Emmerson Mitchell
pa,ying the violin.
Mrs. A, McCall gave the "Call
to Worship" Hymn 86, "When I
survey the Wondrous Cross" was
sung with Mrs. Ray Huether as
pianist for the evening. Prayer
was given by Mrs. G. Watson.
Mrs. McCall welcomed the guests
A .ruusical number was given by
Mrs. Herb Traviss playing the
piano and Mrs. E, Mitchell the
violin, concluding with a duet,
entitled, ',God will take care of-
You". The scripture reading
Psalm 16 was read by Mrs. G.
Watson,
The offering was received
by Mrs. Mac Sholdice and Mrs.
Don Achilles, and dedicated by
Mrs. McCall.
Mrs. G. Watson introduced the
guests Mr. and Mrs. Gordon Mc-
Gavin who showed pictures of
their trip to Hawaii. The corn-
mentary was given by Mrs. Mc-
Gavin. They were thanked by Mrs.
McCall. Hymn 637, "The Lord's

1 pound minced beef
'1 teaspoon salt
1 19-ounce can green beans,
drained '
1 14-ounce can whole kernel
corn
corn, drained
1 10-ounce can condensed
cream tomato soup
Saute onions in fat until trans-
-parent then add meat and brown
(5 to 8 minutes). Stir in remaining
ingredients and heat. Pour into
casserole.
Topping •
1 cup all-purpose flour
2 teaspoons baking pawder •
1/2 teaspoon celery salt
3 tablespoons shortening
1 egg, be
1/4 cup milk
Mix dry gredients and cut
in shorte g until mixture re-
sembles fine bread crumbs. Make
a well, pour in egg and milk, and
mix quickly to make a soft dough.
Turn on to lightly flawed board
and 'knead 4 or , 5 times. Roll
alit to about 3/4-inch 'thickness;
cut out biscuits andLpeade on top
of casserole. Bake at 425 deg.F,
until golden brown (20 to 25 mins,)
6 servings.
BEEF AND .RICE CASSEROLE
1/2 cup chopped onion
2 tablespoons fat
1 • pound Minced beef
1/2 teaspoon salt
Dash pepper
1 cup cooked rice
1/2 cup drained canned peas
1/2 cup whole kernel corn
1 10-ounce can condensed
cream mushroom soup
1/2 cup canned tomatoes '
1/2 cup buttered bread cpmbs
Saute onions in rt•ieltedlat until
transparent, then add beef and
brown. Season with salt. and pep-

zaar.
PLAN CATERING
The 17th and Boundary Unit of
Duff's United Church met at the
home of Mrs. Cliff Ritchie.
Mrs. Geo. Williamson opened
the meeting with a verse. Hymn,
"Will Your Anchor Hold" was
sung followed by the Sc0pture
taken from John 1, verses 1 - 13.
Mrs. Martin Baan then offered
prayer. Mrs. G. Williamsongave
a reading, "Friend". The, topic
was given by Mrs. M. Baan en-
titled "Love in the World". The
collection was received followed
by singing hymn "Come Let Us
Sing of a Wonderful Love",
During the business regular
reports were given and plans
made 'for catering to the W.I.
banquet. The unit will be in
charge of the May U.C.W. meet-
ing. The next meeting will be held
at the home of Mrs. M. Baan.
4-H QIRLS TAKE PART
Huron County Achievement
Day was held in Seaforth High
School on Saturday with eighteen
girls and their leaders of the
per. Arrange layers of rice, beef
and vegetables in a greased cas-
serole. Combine mushroom soup
with tomatoes and pour over top.
Cover and bake at 350 deg; F. 20
minutes. Uncover, sprinkle with
buttered bread crumbs. Return to
oven and continue baking until
lightly browned (about 15 mintes
longer). 6 servings:
CANNED TOMATO TRICKS
When fresh tomatoes are out
of season, take that tonfato-flavor
out of a can. Ontario, canned
tomatoes make an economical
vegetable dish for winter menus
in this recipe from the Food
Department, Macdonald Ins-
titute, University of Guelph'.
TOMATO SCALLOP
1°20-ounce' can tomatoes
1 onion, chopped
1 tbsp sugar
1/2 tsp .salt .
1/4 tsp oregano
dash of rosemary
1 cup bread, cut in 1/2-inch
cubes
1/3 cup grated cheese •
' Combine tomatoes, onion,
sugar and seasonings. Top with
bread cubes and grated cheese.
Bake at 350 degrees F until
bread cubes are browned.Serves
5 or 6.
Pork chops, baked slowly in
seasoned canned tomatoes, are
deliciously moist and tender in
this recipe from the FOod De-
partment, .Macdonald Institute,
UniVersity of Guelph. Add sea-
sonings according to your own
community attending thus con-
cluding the project on ,'Featuring

Miss Catharine M. Hunt, the
new home economist for Huron
County was assisted by Mrs.
Patricia Jacksop, Regional
Supervisor of London, and Mrs.
Joyce Patterson, home econom-
ist of Seaforth./ • Mae),
mothers and guests attended the
afternoon program which con-
sisted of exhibits, skits and dem -
onstrations put.. on by the 4-H •
girls. Presentations were made
to two of the Walton girls, Linda
Johnston and Lynne McDonald
who received their county honors..
HONOR NEWLY WEDS
A reception °was held in the
Walton Community hail, Friday
evening for Mr. and Mrs. Neil
Williamson, (nee Doris Baker).
The evening was spent dancing to
the music of Ian Wilbee's Or-
cheStra. Prior to . lunch the
couple were called tq the plat-
form, the address was read by
Graeme Craig and a purse of
money was presented to thernapy
Neil McNichol. Mr. Williamson
made a fitting reply.

Walton Unit Holds Bazaar
Canned foods were probably
one of our first "convenience
foods". The canning industry in
Canada began about 1878 and the
variety of canned foods available
now is almost without limit.Can-
ada was the first country to have
special legislation for canned
foods in 1907. Since then, the
regulations have been revised
whenever necessary. Canned
vegetables are graded Cagacte_
Fancy,, Canada Choice and Can-
ada Standard. Also on the label
of the can of vegetables is the
weight in fluid ounces, the style
of 'vegetable, any additives ,or
seasonings, the brand narhe and
the name and address of the
packer,.

hearty casseroles for 'supper',

mend these recipes which they
tested and approved in their Ot-
tawa test kitchens. "EaSy Beef
Pie" is a tasty casserole
