Most housewives . know the

provides the nutrition of whole
milk withoet the fat and is con-
venient to use... It is also simple
to measure ,and mix to provide
liquid milk, one pound of the
powder making fourr• quarts of
skim milk. It can be used right
from the container and be Sif-
ted with the dry Ingredients for
cakes, puddings and breads or
• stirred into the flour for gravies
and sauces. Although the usual
proportion to make- instant pow-
der into liquid skim milk is one-
third cup to one cup water, the,

Cream soups made with skim
milk poWder also-give good Om-
* 'rishment at small cost. The
,......hearty 'Vegetable Chowder' is
well stocked with Vegetables and,' •
flavor. It is so full.Of vegetables
there is no' need of flour for
thickening. It can be served to
begin an . otherwise light meal
or an an accompaniment to 4 after -
ski' or 'after-skating', chatter.
ECONOMY CREAM SAUCE
'3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
Dash pepper
t 1/2 to 3/4 cup skim milk powder
1-1/2 cups water
Melt butter, blend4afloitr and
seasonings. Add 'skim milk pow-
- der. Gradually add water 'and
cook, stirring 'constantly • until
smooth and thickened (about 5
minutes). Makes about 1-1/2 cups
(sufficient for 6 servings of vege-
tables).
.Variations: m -
Egg Sauce:- Add 2 hard-cooked
. eggs to basic recipe at the end
of cooking and heat.
Catsup Sauce:- Add 1/2 cup to-
'mato catsup to basic recipe at
the end of . cooking , and heat.
Green. Onion Sauee:::- Add 1/2 cup
sliced green'onions,to basic re-
cipe at the endof cooking.
Olden „Sauce:- Saute 1/2 cup-
chopped" onion melted butter
before blending in flour.
Cheese Sauce:- Add 1 cup grated
cheddar cheese, 1/2 teaspoon
dry mustard and a dash cayenne

VEGETABLE CHOWDER
1-1/2 cups chopped 'onion
1/2 cup diced celery
1/2 cup diced green pepper
1 eup diced carrots
3 tablespoons butter ,• „
2 cups diced potatoes
2 ceps boiling water
2 chicken boAllon cubes
1-1/2 teaspoot% salt
1/4 teaspoon pepper
1/4 cup chopped parsley
1 can (12-ounce) whole kernel
'corn'
1 cup shredded cabbage
2/3 to 1 cup skim milk powder
2 cups cold water
Saute onien, celery, • green
pepper and carrots in melted but-
ter until onion is. transparent
(about 5 minutes). Add potatoes;
boiling water and bouillonctibes.
Stir until cubes 'dissolve. Add
seasonings and parsley. Cover
and • simmer. Until vegetables are
tender (15 to 20 minutes), Add

in retail stores in packages•
of one, three, eight and ten
pounds.
Where should skim milk pow-
der be stored?
A. Because skim milk powder is
sold in packages, it •may be
conveniently stored in .a kit-
chen cupboard. Once the
package has been opened, it
should be kept tightly covered
to prevent air and moisture
from entering. The reliqui-
fled milk should be treated
as fresh milk and kept cold
and- covered.
Q. How long care.s.,kim milk pow-
der be stored?
A. Unopened packages of skint
milk powder keep for many.
_ -, months but it is good practice
.to use it within six to nine
months. Once the package has
been opened it will keep about
two months with little, change.
Reconstituted milk powder
will last as long as fresh milk.
