LIFESAVING TIPS FOR THE
COOK -
BURNT THE STEW? Immed,
intely put 5 - 6 ice cubes in an-
other pot, pour contents of , burn-
ed pot (without scraping bottom)
over them and let sintther on low
heat until—the stew is hot. The
smell and taste of burning should
be gone.
TOO MUCH SALT? If a soup or
sauce is too .salty, you can some-
times bring it back to normal by
simmering a washed and quarter-
ed unpeeled potato in the liquid,
for 15 minutes. Then discard the
potato, add a pinch of sugar, stir,
and taste. If potatoes • are too
salty, try pouring fresh, boiling
water over them, stirring a few
seconds and draining. Now they
should be palatable.
HARD, LUMPY SUGAR? You
have two alternatives. Steam it
in the top of a double boiler, then
crush it with .a spoon, and
spread it' on a tray to cool. Or
put sugar in a paper bag, close
tightly, and set into a• 350° oven.
When the bag 1is warm, the sugar
should be soft enough to delump
joy simply passing a rolling pin
'over the bag. Then spread the,
sugar to cool.

DAIRY PROGRAM CHANGES
The deadline for Graduated
Entry application to the O.M.M.
B. Group 1 Pool approaches. All
applications must be received at
the Q.M.M.B; head office not
later than May 15, 1974.
Graduated entry to the. Board's
Group '1 Pool is available to'
Milk and Cream produCers who
have been in dairying continu-
ously since April 1, 1972. This is
a change in the program and
makes new producers eligible
for the graduated entry
for, the first time. Complete de-
tails and applications are carried
in the March issue of the Ontario
Milk Producer.
Top price milk in the Group 1
Pool reached $10.45. per hunderd
weight on April 16 when the price
was increased.. The Group 2 milk
producers should be receiving at
least $8.50 per hundred weight for
their April production with the
announcement on March 29 of
the '74 7 '75 Canadian Dairy Com-
mission Program and the subse-
quent price changes. The C.D.C.
have eliminated their Subsidy
Eligibility Quotas for the present.
The, new program is designed to
encourage production and the
subsidy of 65.71 cents per pound
of butterfat will be paid to all
milk and.cream producers having
Market Share Quota to cover
their production. Group 1 pro-
ducers will receive subsidy on all
production over 106% of top price
sales, providing .it is covered by
M.S.Q. •
Officials of the 0.M.M.B.,
Processors: and Government, are
presently active' in formulat-
ing a new quality program. It is
expected the program will in-•
corporate price penalties to pro-
ducers of low quality rather than
the present 'policy of complete
shut-off from a market.
