Day Service Sunday
ST. HELENS NEWS
On Sunday afternoon, a Ftem-
embrance Day Service was held
in the St. Helen's Hall with the
Lucknow
in attendance. Pastor Alfred Fry
of Auburn was in charge of the
service with Mrs. E. 'W. Rice as
has a 'very' pleasant flavour.
Broccoli can be served in many
combinations. A cheeseor hol-
an al
goes, a long way towards making
broccoli an extra special corn-
many- dish. Crisp bacon-,--thint
sliced ham or chicken, curry
powder, nutmeg, pimento are del-
icous additions. Of course it's
hard to beat cooked broccoli top-
ped with sour cream or butter
and perhaps sprinkled with' chop-
ped toasted almonds.
Broccoli is at its belt Tightnow,-
but frozen broccoli which is avail-
able all year, is 'also very good.
If you have "missed" broccoli .
until now, give it a couple of
tries.. I think' you'll really 'enjoy
it.

FEEDING WHOLE CORN
TO LIVESTOCK
There seems to be' increasing
interest in the • feeding of whole
corn to beeecattle. This practice
has been carried on for quite a
number of years and research
on this subject dates back to
the turn of the centiiry.
Recent research, conducted
mainly in the 'U.S. has shown that
when high grain . rations are
fed to growing - finishing calves
and yearlings, there is no need
to roll, grind or crack dry shell-
ed corn. However, contrary to
opinion, high moisture shelled
corn should always be rolled or
ground for maximum efficiency.
Cattle seem to chew dried corn
more than high moisture corn.
Young cattle chew their food
more thoroughly than older cattle
and are therefore more suited to
utilizing whole corn. Therefore,
farmers -should- continue_to, „pro-
cess corn for cattle about 2 years
and over. It has been suggested
from studies that when '15 lbs. or
more of silage corn are fed per
head daily, then shelled corn
should be ,ground or rolled for
best. results.
Therefore, feeding of whole
shelled corn is not likely to play
a , significant role in the feeding
of beef cattle in Bruce' County,
since 'most of the cattle fed here
go on pasture in the summer and
are- sold_as stockem and feeders
and do' not receive a. high-grain
ration. Also most cattle receive
too high roughage in the ration
for whole corn feeding. However,
it could play a part in the, feed-
ing program where cattle are
being confined and fed for rapid
gains , from a young age. In this
case-there-could-be--quite-a-s
ing, since the cost of grinding at
$4 - $6 per ton would be elimin-
ated.
RAW SOYBEANS FOR
DAIRY CATTLE
When soybeans, constitute less
than 25% of a grain mixture,
there should' be no adverse ef-
fects especially 'on palatability
of -feed, milk production and milk_
flavour.
Sbybeans 'should. be rolled or
ground. Urea cannot be used in
grain mix with raw soybeans. Sil-
age treated with urea is alio not
recommended, 'for feeding, with
soybeans..‘

BROCCOLI'
At this time of the' year, briac-
- coli,. a vegetable which is often
neg-lected_b_ of us, is at,
its peak, Broccoli sorneWliatre--
sembles green or purplish cauli-
flower and is a member of the
-cabbage-family.
Top quality broccoli is free
from wilted leaves and has ,
compact clusters of tightly clos-
ed buds. 'Tile buds and leaves are
either sage green or dark purp-
lish in colour, depending on the
variety. •
Broccoli is usually eaten cook-
ed very, good when used
raw — broken into flowerettes-
and used as a relish or in salads.
To prepare broccoli, remove the
leaves, and the tough parts of the
stalk. It is wise to wash the broc-
coli in salted water to remove
any insects and dirt. If the stalks
,are quite heavy, splitting the
stems up to the buds insures
quicker soaking If at all possible
stand the broccoli pp_ during
cooking" so the Steilik--whil
the buds steam and so are not so
likely, to be overcooked. As with
other vegetables, start cooking
brOdenli in boiling water. 'Because
it is a strong flavoured vegetable,
cook it with the lid off. Crisp
tender, as you know, is the best
degree of donene-ss for veget-
ables. I/ properly. cooked, broc-
coli is bright green in colour and
