LONDHSHOR,0 CREAMERY.
Your "special correspondent called at the
above creamery, winch je about 1i miles
from Londesboro, and found Mr. Geo. Brown-
ing, the manager, in charge, who very kindly
elbowed him through, and explained the MO*
tbOrl of viorking. The building is of brick,
about 30x40 ft., two stories high, the upper
one being used as it dwelling. The lower
storey.is divided into work room, star room,
with eheet• zinc each with a capacity di 100
4
and main room, with briar floors, here is
a Wooden leant° used for an engine ro . In
the cream room there are eix tanks, lined
gallons into Which' the cream is 'put when
collected. Here it remains 24 hours, and the
tenaperature is kept at 60° of heat, by a stream
of hot or cold water passing around it. It is
then transferred to a churn in the work room,
which runs slowly, by steam, for about two
hours. They „china three times a day, mak-
ing about 150,pounds of butter at a damning.
The butter milk is conveyed by an under-
ground drain to a tank, called the butter milk
well, where it ie fed to pigs at the lower end
of the lot. The creamery has made this sea.
Eon 20,000 lbs. of butter. During the three
reeks ending Jury 12th,' they made' 130 fir-
kins, averaging 56,113s. each. They have ma-
chinery capable of making 1,000 lbs. k day if
they:could get the cream." After the batter
if thoroughly' worked, it is packed. and put
away in the store room, where it is kept cool
and nice for the market. Everything has the
appearance of neatness ,and cleanliness •and
there ia no doubt but that they are destined
to do a large.volume of business. Their .1aut-
tee commands the highest price the mails.
