Only One Grade of Eggs
Wanted.
The following taken from the litera-
ture being sent out to the (':"- opal ive
Poultry Circles, gives in concise feint
the kind of eggs the market wants and
how to get thew :
An egg not over four days old in
warm weather and seven days old itt
cold weather. An egg that has been
gathered ptoutptly and kept in a dry
place free trove draught, dampness, or
any fuel odor. On holding a new
laid egg to the light it will he . seen
that the air space in the large end is
very small, not larger than a 5c, piece
and the yetlk almost, invisible. As the
age continues the air cell becomes lar-
ger and the yolk becomes more visible.
Though some HMI kers May call fur
several grades of eggs, as •a general
rule there is no necessity for many
grades. What the best trade de-
mands is freshness, grading,
uniformity in peeking rued re•

Moaning in mournful gusts thine elegy!

For time hath caught thee, even as. the Qat
Catches the gray and agile whiskered rat,
And now thy praise we siz}g,
Gathered about the hoard, serene and gay,
Upon Thanksgiving day.
With joy we see thee lying on thy back.
Thy chaste, lush drumsticks sticking in the air;
Thy wings in sweet peace folded and, alack,
The incense of thy stuffing, pungent rare,
Filling our souls with heavenly melody,
The while with fork and knife
Thy dark meat and thy white pleat fondly we
Suffuse with gravy in our revelry
And then, with pleasure rife,
Each dainty morsel neatly tuck away
Upon Thanksgiving day. .

Or any other minstrel that is loose

The prairie hen is small;
Thou art the bird of freedom anyway

Cream or Cheese.
The St. Thomas Tinges, in referring
to what The Sun hassaid its to the
export of crsain from Canada. to the
United States, expresses 'the opinion,
that it would be better to manufacture
the cream into butter or cheese and
sell the product 10 Great Britain.
Possibly. But the farmers who are
doing the selling' do not think so and It
must be conceded that they offer very
substantial arguments in support of
what. they are doing. If farrners along
the St. Lawrence frontier made their
milk into cheese for the English mark-
et they would, says the Huntingdon
Gleaner, obtain 80c per cwt out of their
milk. By shipping cream.to. the United
States artd retaining the milk, their
totltl returns amount to $1.15 per cwt.
It might he a wise thing to throwaway
35c ou each hundt•ed pounds of milk
produced, -hut "the Times will have
difficulty in inducing these St. Law-
rence dairymen to accept that view of
the case.
