And so, I ,have been making jelly and more jelly. Apply jelly is the Most popular `sweet' to ,.eat.,with tdast ,around. here. And it • is se' easy, you don't ''need extra pectin with apples. Just cut, them: up, skins .and ,cores (but no worms please). I do my pre- serving; ,kettle about ' two-thirds full, with enough water to. • see it, through • the' . apples. Mother Used to Make":. 3 reed 'peppers, 3 green Peppers, 12 tart apples, 12 ,med- ium; ripe tomatoes, 6 . medium onions, '1 cup; diced celery, 2 ounces crystallized .ginger,: .1, pound seedless raisins, 2 quarts vinegar (cider vinegar if you prefer), 3 cups sugar, 2 teasp. salt. • Cut peppers ' and remove seeds.. Pare apples.' and 'remove core. ,'Force -vegetables; apples, ginger and raisins' through 'a food chopper. Combine all . in= gredients and cook until chutney' is . thick and ,clear, about 1. hour. Fill 'sterile. jars and seal at once. •This is 'a :nice sweet relish peach `and. pepper 12 large red, peppers (6 of them hot), `12 'large peaches (or more), .3- :lem ons, 3 lbs. white sugar, 3 slices root ginger 1. pint whitevine- gar. Chop peppers and peaches and lemons and ginger. Combine all ingredients, and cook until thick and clear. Remove lemon and ginger root.' if you prefer.
