Did . you ever, see so many
apples by. the wayside as this,
year? •Every time my husband•
goes out .with the car he comes
back laden •-- optimistically
keeps baskets in the trunk, so
as tobe prepared.
And so, I ,have been making
jelly and more jelly. Apply jelly
is the Most popular `sweet' to
,.eat.,with tdast ,around. here. And
it • is se' easy, you don't ''need
extra pectin with apples. Just cut,
them: up, skins .and ,cores (but
no worms please). I do my pre-
serving; ,kettle about ' two-thirds
full, with enough water to. • see
it, through • the' . apples. Some

apples could be almost covered,'
Boil slowly until the apples are
soft as Soft, and the colour has
,gone into the juice, Strain thru
jelly bag, and rboil again. Mea-
sure and add sugar, two-thirds
of a cup, to one ,cup juice.Boil
Boil
until it sheets from the .spoon..
1 love that step in the process.
T love to see the .two beautiful
clear ruby -coloured drops form,
and . then slowly ; run, into one
and. fall thickly from the side of
the spoon.
Sometimes I add chopped mint
leaves after it is strained, and
cook• for 'a few minutes. Strain
them, •out beforey the sugar is

serve jelly with meat (awfully

meats, just the right wild tart-
ness, But I tell you that • every
year! Crabapple jelly gives your
Christmas cake a fine flavor.

Here's an , apple chutney out
of "Dishes . Mother Used to
Make":. 3 reed 'peppers, 3 green
Peppers, 12 tart apples, 12 ,med-
ium; ripe tomatoes, 6 . medium
onions, '1 cup; diced celery, 2
ounces crystallized .ginger,: .1,
pound seedless raisins, 2 quarts
vinegar (cider vinegar if you
prefer), 3 cups sugar, 2 teasp.
salt. • Cut peppers ' and remove
seeds.. Pare apples.' and 'remove
core. ,'Force -vegetables; apples,
ginger and raisins' through 'a
food chopper. Combine all . in=
gredients and cook until chutney'
is . thick and ,clear, about 1. hour.
Fill 'sterile. jars and seal at once.
•This is 'a :nice sweet relish
peach `and. pepper 12 large
red, peppers (6 of them hot), `12
'large peaches (or more), .3- :lem
ons, 3 lbs. white sugar, 3 slices
root
ginger 1. pint whitevine-
gar. Chop peppers and peaches
and lemons and ginger. Combine
all ingredients, and cook until
thick and clear. Remove lemon
and ginger root.' if you prefer.
A nice uncooked pepper hash,
I. medium'' sized cabbage, 4 large
onions, 4 green sweet peppers,
4 red sweet peppers, ' 1 bunch'
celery; Chop cabbage and -onions,
fine,'Put in crock with scant 1
cup of salt.' Let stand overnight.
Drain .thoroughly, then add pep-
pers and celery, chopped fine;
Add 3 'cups sugar,.enought •cold
vinegar " to just cover. Stir well;
Put in" jars.

I'm not sure if this is it or not,

spice, tied in cheesecloth bag, 1..
pint . vinegar. Boil about .1 hour
