Easter breakfasts used to. be
quite an event at oiir bowe,
with eggs featured plentifully.
It had somewhat the 'flavor of
the More. modern 'brunch,' ‘ and,
was 'a hearty, and:leisurely meal:
If yOu. have, , .hOuieful of

over very well. You might .Start
with a baked apple. It you want
to glamorize 'it, ,core it and fill

you could have waffles or pan-•
cakes with fresh maple syrup

. Hot Cross Buns '• -2 packages
active • dry yeast, one-third cup
witer;: one-third cup ,milk, scal-
ded, •one-third clip, sugar; Vai tsp.
salt, 1/2 cup 'Melted shortening dr
salad 'oil, 1 cupsifted enriched
,1/2 tsp. Cinnamon, (yoix
may add a 'dash of nutntieg and
mace too, if you like) 3 eggs,
two-thirds cup currants, about
2112 cups sifted enriched flour,
Soften yeast in warth water,
combine milk, sugar ;• and
shortening; cool to lukewarm.
Sift 1 'cup flour with the cinna-
mon; Stir into milk mixture,
Add eggs and beat well, Stir in
yeast and ciarants;, add remain-
ing flour to make soft dough;
Cover with damp cloth and let
rise in warm place till double
in bulk, about 11/2 hours. Punch,
down, R011 'Or pat out to 1/2 inch
On lightly' floured sUrface, Cut
in rounds with a 21/ ,inch biscuit
cutter; shape into buns. Place on

greased ibaking sheet about 11/2
inches 'apart: Cover and.- let, rise,
until almost double,' (about one
hour). If desired cut ',shallow
cross on top with scissors.
Brush, tops with•egg white. Bake
in moderate oven (375)12 to 15
min. or until lightly .browned.
Add .confectioners sugar, about
3/4 cup, to the remainder of egg
white, and pipe cross .the top of
each bun.
For the Easter dinner, of
course, the main 'feature is ham.
