RECIPE OF THE MONTH By the Ontario Tender Fruit Institute "Buy Canada Choice Canned Fruit" erryream. . quare .. 9 (sMe:v ngs) 2' cups fine graham wafer crumbs 1 tablespeen. brown sugar .?/a cup, butter, melted . 11 • teaspoons • gelatine 3. tablespoons' water 1 (8 -ounce). package cream •. cheese • • 1 cup sifted icing sugar 1: teaspoon lemon rind • • 2 teaspoons lemon. juice i pint Ms cups) . whipping cream • (20 oz,) can. "Canada* Choice"Cherry 'Pie Fill ing 1 • Combine 'crumbs, brown sugar and butter. Press half mixture in bottom of but- tered' 9 -inch- sq. cake ';pan, Sprinkle gelatine. over ;wat- er; let' stand, 5 mins. to soften. and dissolve over hot water. Cool.,Cream cheese; grad-' ually _.beat in. icing : sugar, lemon rind and juice, :$lend gelatine into stiffly -whipped cream foldinto cheese mix- ture. Spread half'` cheese mixture crumbs in. cake pan.Carefully spread read cherry ' filling on top.Add remaining cheese mixture. and sprinkle with remaining crumb mixture; .Chill ' and servecutin squares..
