The roots of the 'beets,. tom -which the tops-haye been removed, are first soaked. in .cold water to loosen •the 4irt, then scrubbed well. After- washing, the, crown; or top portion' of the root is Gut off at '•a' point :b_ the lowest leaf scar and all re ri portions removed;' The reason' for this is that the .crown • contains the greater part of _the salsa-ia7ren from 'the soil, and it .is desirable to have', the syrup as 'free as pos- sible from these salts.
