I've been :away a ,week, and

like 'dill pickles?. They ,are like
olives' . . you have to acquire
a taste; for them. I ate My first

hand, for them. Here's* a recipe
I ,got from . one .of them: '
DILL D,ANDJES-:makes three
'quarts.' Wash 24, large cucumbers.
Cover with . cold water, let stand
overnight in epoll place. Pack in
3 sterilized quart jars, leave room
for ;seasonings. Add to each jar,
One-eighth tsp. powdered alum,' I
clo►vre ,garlic, '.2 heads fresh
strip of hot:: red pepper. Com-
bine and (bring 'to ;.boil;' 2 cups
eider vinegar; ;}/2.- eup coarse salt,
6 cups hot water. -Fill jars with
hot solution Tap each with glean

are usually. popular. •2 quarts.
Sprinkle 2 cup :salt' over :25 medr
ium cucumbers, sliced, 12' onions;
slicecd:_ Cover with ice 'water. Soak
for 3`:hours; drain. Combine and:
seat to • boiling,' 1 quart :cider.
vinegar, 2, cups sugar, 2 tsp. each
mustard. seed, turmeric, :celery
seed,' cassis' buds. , Add anions and
cucumbers., Heat fbr two min -
Utes , but de not boil. Fill steril-
iced jars. Seal. Fin not ' too fond
of pickling with' •'cider • vinegar
myself, and. ,often substitute
white vinegar, for cider; although
they tell- me that by doing so.
I sacrifice some of the desired
flavor. :My fa1riily' do 'not: like.
their ,pickles strong' nor .sour and
so, . l :even dihite , the: vinegar oc_
casionally. % A' friend ,gave me :a
nice tip about this, -.She suggested
using apple juice instead of water,
for diluting,. saying that .it gives
more of the flavor of.cider vine-
gar.

Out in the country again, ,'in'the
•auttinur.! ' Elderberry" bushes by
'the roadside, wild '' crabapple or
maybe a pickling 'pear , tree in• ,a
fie corner; and hawthorn. Wild`
apples do make such delicious
jelly. Any apple felly is irrprav-
edi both in taste and color with
smidgeon of elderberry juice,'
or chokecherry. That's a roadside
fruit• that should not be overlook-
ed. Good for. nothing but jelly
of 'course, but 'it is so .good for
that, that'. it needs . no, other use.
I . alwa►s 'use :i.t with apple 'juice,.
an applethat has, plenty of pec,
tin • and will jell well: You can
snake ,chokecherry jelly with
commercial pectin too, of course,
but We like The combined 'flavor
of apple '..and chokecherry.

min. 2 cups water, 4 lbsti sugar.

thin and ' add 4 lemons. Simme'r
two 'hours or until fruit is trans-
