contributed two.• recipes. which
she took, front an.English recipe
'book; ' . •
Scones--? lb..McDougall's . self
raising. flour, .1/4 tsp. salt, 11/a ozs..
margarine, 2 ozs... fruit, (optional),
1 tablespoon sugar (optional), Y4
Pint, ' milk. Pi epare , the mixture
and•'mix. to ,a. light: dough' with a
'fork. Turn on a , floured • board,
knead lightly; :until smooth; turn.
over and roll out until the dough
is just under .1/2•' Inch thick., Cut
into rounds and place on ,greased
+baking sheet. Press. the trimmings
together With the (fingers, .and re-
peat the rolling 'and nutting: Bake
in a hot oven, 12 ',to 15 minutes.

ozs. lard, 1,: •tsrp• •'salt, 1 tsp. bak-
ing .powder, 1 tsp. 'sugar, 'a , few
currants' or . raisins.. Sour Milk.
Mix, all the; ingredients together,
rub in. •lard r well, and mix• to
stiff dough with •sour Milk.. Roll
out on •a floured beard. to ,about
1/2 inch thickness.' Cut: into
rounds, 'bake.. in �a quick' oven,
or iron:- frying. pan.' Nice hot or
cold,' buttered, of • course. To . test
the heat of:'the' Bridle or iron
frying pan, sprinkle a� little ..dry
flour. • It • should become 'golden
brown in a minute: or two ,Cook
on floured pan (heavy , iron) `4
minutes' on each side.
