Stop 1: Bayfield Berry Farm - 77697 Orchard Line, Bayfield In true Canada Day style (July 1st), we showyou our red and white Canadian Pride at the Bayfield Berry Farm for ever -bearing strawberries and cream. Currants and raspberries might also be in season. Resilience: In the past few years, there were losses due to early frost. This year, the farm lost peaches and cherries due to the long cold winter. More and more, trees and perennial crops are being considered an important component to resil- ience in agriculture, but still there are many challenges in the face of climate change. www.bayfieldbenyfarm.on.ca Stop 2: Schilbe Sugar Bush - 35314 Telephone Road, Bay- field Here, we venture into the Ontario bush to taste pure maple syrup at a modern maple -producing operation just up the road, which uses miles of plastic tubing, a vac- uum pump and reverse osmo- sis to deliver sap to the evapora- tor. www.ontariomaple.com Resilience: Sugar maples can be quite robust, but are sensi- tive to changes. As long as we continue to have freezing events, there should always be maple syrup, even though climate change is likely to affect sap flow. Stop 3: Lunch and Speaker at Park House Restaurant - 168 West St, Goderich via the `Square' The Town of Goderich has a great story to tell about resil- ience and how it bounced back after a F3 rated tornado tore across Huron County on the afternoon of Sunday, August 21, 2011, striking most of its Birthday Ar Club Jasmine Milligan Kaelin Wood Drew Feddes Kimberly Raithby June 18t June 18t June 20t June 24th If you wish to have your childs name and birth date in the Birthday Club for ages 1-12 Please Call Christy 519-482-3443 IT'S FREE!!! Clinton OODUJ [kg D 6 Mary St., Clinton • 482-9341 significant features, including the Port, the town's Central Square (an octagon), its larg- est industries and damaging many homes in the surrounding area This was the strongest tornado to hit Ontario in over fifteen years. Enjoy a deli- cious local food lunch, overlooking the third-largest freshwater lake on Earth, and perhaps watching a ship being loaded with salt from the largest salt mine in the world at the Port of Goderich Resilience: Susanna Reid from the County of Huron Planning Department will tell us about this town's great story of resil- ience. www.goderich.ca/en Stop 4: Sifto Canada Evaporation Plant, Regent Street, Goderich Canada has three known major salt formations located in Western Canada, Ontario and the Atlantic Provinces. Sifto Canada in Goderich is the world's largest salt mine, producing 7,250,000 tons of salt annually. We will tour the evapora- tion plant where salt blocks, licks and bags for livestock are produced. Resilience: The tornado took only 13 seconds to cross the town and hit Sifto's evaporator plant directly, where 300 Km per hour winds ripped the roofs and sid- ing off most of the plant's buildings. The $40 million re -build meant meeting criti- cal delivery schedules, getting the work- force back on the job and giving the com- munity a much-needed bit of optimism. Just six weeks after the storm, the major- ity of the Sifto evaporator plant's work- force was back at work. In six months, the majority of the plant was weather tight and production was back in full swing on 90% of the equipment. www.siftocanada.com/en/about-us/ salt-canada Stop 5: Huron Commodities, Sharpe's Creek Line, Benmiller Huron County and area is also one of the best places in Ontario to grow edible beans because of a perfect combination of heat units, moisture and soil conditions that edible beans thrive in. Kidney's, navy's, adzuki's, pinto's, soya beans, some of which are exported to Asian markets, and white beans which are an important crop for Heinz's baked beans, are all grown here. Resilience: Huron Commodities special- izes in Identity Preserved food grade soya beans segregating them byvariety, size, and protein and sugar content for distribution to different markets in the food industry. They are under construction because their business is growing again. We will hear more about this and see a test plot of edible soya beans growing on site. www.huron. com For more information about this tour: Contact Gayl Creutzberg, 2013 Nuffield Scholar gumbootgourmet@gmail.com or 519-335-6333.
