HomeMy WebLinkAboutThe Citizen, 2017-11-16, Page 11Blyth's Gusso part of 'Road to the Royal' By Shawn Loughlin The Citizen Last Friday, Blyth chef Peter Gusso was in Toronto plying his trade for over 100 spectators at the Royal Agricultural Winter Fair. The process began in September, when representatives of the fair hosted a special cooking demonstration with Gusso and chef James Eddington of Exeter at the International Plowing Match in Walton. The pair cooked for audiences in the match's Lifestyles Tent, overseen by locals Brenda Dalton and Cheryl Ryan, as part of the "Road to the Royal" which would eventually bring the two Huron County chefs from one of the province's premier agricultural showcases to another. In an interview with The Citizen, Gusso said he had a great day at the Toronto fair on Friday and that it was an amazing experience to cook in front of that many people in such a great food city as Toronto. Both he and Eddington, as part of their demonstrations, had to construct dishes using both eggs and apples. Because of the nature of the fair, the competition was sponsored by the Eggs Farmers of Ontario and Eddington's apple supplier, so they wanted to test the chefs' creativity by dictating some of the ingredients. As a result, Gusso said he made a smoked pork shoulder with an apple cabbage slaw and a spicy avocado mayonnaise. With the exception of pre -smoking the pork at his Blyth restaurant, Gusso made the rest of his dish's ingredients on-site during the demonstration. Eddington, Gusso said, prepared an apple and bread pudding with a caramel sauce and brandied whipped cream. Gusso and Eddington didn't take part in the Royal's annual chef competition, but rather their Road to the Royal cooking demonstrations were part of a series in the Royal's Lifestyles area's food program. Gusso said that every day in the Lifestyles area there was over eight hours of programming dedicated to food, whether it was from chefs or farmers and producers. Gusso said he wanted to thank Ryan and Dalton for pairing him and Eddington together and making the Road to the Royal possible. Eddington, Gusso says, is a fellow Huron County chef with whom he'd love to work more if possible. Gusso is currently hard at work opening his second Part II Bistro location, which is in Goderich on The Square. He was handed the keys to the business on Monday. He plans on closing it for a number of weeks while he works to improve the functionality and design of the location ahead of an opening sometime in December. Cenotaph railings proposed The Wingham Business Improvement Area (BIA) wants to renovate the Wingham cenotaph to make it more accessible. During North Huron Council's Nov. 6 meeting, Director of Recreation and Facilities Pat Newson presented a report outlining that the BIA wants to put rails on both levels of the cenotaph's stairs. The move would provide support for anyone with mobility issues. The Royal Canadian Legion Branch penned a letter in response to the request saying railings could be put on the lower flight of stairs. The letter requested the upper flight of the monument be left without railings to prevent interference with the annual Remembrance Day service at the site. Councillor Trevor Seip, however, argued that limiting accessibility for one day out of the year was illogical. "We're not putting anything on the top because of one day," he said. "[Anyone with accessibility issues] that wants to see the cenotaph any day but Nov. 11 can't use it .... If we're talking about accessibility, let's improve accessibility the whole way, not just halfway" Newson said part of the reason the Legion made the request was due to the honour guard provided by the Cadets for Remembrance Day. "Sometimes Cadets faint," she said, adding the Legion requested room for the Cadets' safety and room for placement of the wreaths Correction In the Nov. 11 edition of The Citizen, Tom Cunningham was incorrectly identified as the winner of the 1997 election in Hullett Township. The error was printed in the Looking Back Through the Years section of the issue. Robert Szusz defeated incumbent Tom Cunningham 293 votes to 267. The Citizen apologizes for the error. on Remembrance Day. "Maybe the Legion can reconsider after people see it," she said. "I'm quite confident the Wingham BIA would still support it for next year." Seip said that safety for fainting Cadets changed his opinion on the issue. Councillor Brock Vodden said he wasn't arguing with what had been presented, but said that for the 364 days a year that aren't Remembrance Day, people might not be able to read the names on the monument, which is a problem. Council approved the proposed plan to have railings erected around the lower stairs of the monument.
